I don’t know about you, but I am always looking for ways to save time in the kitchen. Here is an easy clean eating meal idea that you cook once and eat twice. One morning this week I baked several boneless skinless chicken breasts in the oven on low. Easy breezy, just cover with foil and bake on low until done. For lunch, we had a salad with baked chicken and lots of veggies. Then, I sautéed green peppers, onions, and added the extra baked chicken. At dinner, I made a wrap with the chicken, peppers, and onions and served with a side of broccoli and raw carrots and celery. Easy healthy eating day that didn’t require tons of time in the kitchen.
