Green Eggs & Ham Breakfast for Dr. Seuss’s Birthday!
My children have been asking me all week if I’ll make “Green Eggs & Ham” for breakfast on Saturday, for Dr. Seuss’s Birthday. (March 2) Of course – you just can’t say no to cuteness like that! (even though waking up early on Saturdays to cook is NOT my thing…)
I’ve had lots of experience with green eggs, since we do it every year for St. Patrick’s Day. Here are a couple tips:
If you have kids who don’t totally love eggs, especially fried eggs – you might want to make yours how I do.
Scramble them in a bowl with milk, salt and pepper and add in the green food coloring (just do a few drops until it reaches the desired shade of green). Then as they’re almost finished cooking – toss in a couple handfuls of shredded cheese.
“Cheesy eggs” are the ONLY kind of eggs mine like 🙂
For the “Ham” part – I had to get a little creative, because Lord knows I’m not baking a ham on Saturday morning.
I ran out and bought some Hillshire Farms smoked ham lunchmeat and I already have several cans of biscuits in the fridge – so we’ll be doing ham biscuits. Easy peasy!
