Since I see people asking all the time for crunchy snacks, I am always trying to think of a new Keto/Low Carb snack idea. As I was taking pizza rolls out of the air fryer for my son’s lunch today (don’t judge – I know they are not healthy), I thought about how much my hubby loved the crispy almost burnt pepperonis on top of a pizza. We always get double pepperoni because he loves the crispy ones so much. I’m not sure why I hadn’t thought about it before, but as my kids were cleaning up their lunch, I grabbed a pack of pepperoni, mozzarella cheese, Italian seasoning, parchment paper, and a baking pan. In less than five minutes I had Pepperoni Crisps ready for the oven. Although they don’t necessarily look pretty, they turned out so good and crispy. My big kids loved them, and I know my hubby will want to dig in as soon as he gets home. They are a great very low carb/keto snack to help ward off hunger. Pepperoni Crisps are a fabulous keto/low carb snack idea when you need something crunchy.

Step 1: Preheat oven to 400 degrees and cover baking pan with parchment paper. Lay pepperoni slices on the parchment paper leaving some room between each.
Step 2: Top each pepperoni slice with mozzarella cheese then sprinkle each with Italian seasoning.
Step 3: Bake for 9 minutes then remove from oven to cool. As the Pepperoni Crisps cool, they will begin to crisp so that they are sturdy like a cracker.
I just thought of this, but next time I will sprinkle a little parmesan cheese on top before enjoying them to add even more flavor. They turned out so nice and crisp, which is the kind of snack that many people miss while following a Ketogenic or Low Carb lifestyle.

- Pepperoni Slices
- Mozzarella Cheese grated
- Italian Seasoning

Sprinkle Mozzarella cheese on top of each pepperoni slice.
Sprinkle Italian Seasoning on top.
Bake for 9 minutes then remove from oven. The Pepperoni Crisps will begin to crisp as they cool.
Optional: Sprinkle parmesan cheese on top before enjoying.
