THE VERY BEST KETO WAFFLES RECIPE

With a big family, I have always avoided making homemade waffles because it took forever. No one wants to spend all morning monitoring the waffle iron and cranking out waffles! However, my kids love waffles, and after watching the Keto documentary, The Magic Pill, I decided to be more intentional to feed my kids with less processed foods.

Don’t get me wrong, we have made many great health changes over the past couple of years, but boxes of waffles and cereal still find their way in my shopping cart for my kids each week. I’m not saying I will never purchase them again, but I will try to make a big batch of these Very Best Keto Waffles once or twice a month at least. I also recently got an awesome double Belgium waffle maker that certainly makes it easier to make a lot of waffles at once.

As you can see, these low-carb waffles turned out nice and fluffy. I’ve made 3 different batches this week as I tested the recipe. All four of my kids loved them, which says a lot. My son, my toughest keto critic, said they are his favorite keto recipe to date. That means this keto waffles recipe is a winner!

Also, make sure to note, these low-carb waffles are sugar-free, gluten-free, and grain-free. Since they are made with coconut flour, they are fantastic for those with a food allergy to almonds.

Ingredients you’ll need to make keto waffles:

  • Coconut flour is my keto flour of choice since my oldest daughter is allergic to almond flour. However, if you’d like to use almond flour instead, you’ll need to follow a 1:4 ratio. (¼ cup of coconut flour = 1 cup of almond flour)
  • Eggs – It may look like there are many eggs in this recipe, but keep in mind the quantities on the recipe card are tripled! Eggs add bulk to the batter and help bind everything together.
  • Swerve Confectioners – This is a keto-friendly powdered sweetener. You can swap it out with Lakanto Monkfruit powdered at the same ratio.
  • Cream cheese – Make sure your cream cheese comes as close to room temperature as possible before mixing the ingredients. The cream cheese adds richness to the waffle batter.
  • Heavy whipping cream – Cream also helps add fat and thin out the batter to spread nicely in the waffle iron.
  • Cinnamon – I always tend to add a dash of cinnamon whenever I’m making keto waffles or pancakes. It adds just the right amount of spice and warmth to take the waffles to the next level.
  • Lakanto Maple Syrup – This is optional, but I personally can’t have my waffles without a nice healthy drizzle of sugar-free maple syrup. I love this one from Lakanto!

TIPS FOR MAKING THE BEST KETO WAFFLES

1. Have the right equipment – The waffle maker that I have is a Cuisinart Double Belgium Waffle Maker with two plates to add batter to the top, then turn the handle and make a second waffle at the same time. Being able to make two at once definitely speeds up the process.

2. Make a lot at once to save time – In my opinion, if I am going to make waffles, I’m making a ton at once; however, if you’d rather make less, cut this recipe by 2/3 as I tripled it to get the amounts below. This keto waffles recipe is a breeze to adjust and even easier to make. Just dump all your ingredients into your blender, mix, and let the waffle maker do the rest!

3. Overmixing can make them tough – Don’t overmix the batter. Since we are using a blender, you won’t have to worry about using a mixing bowl or separating wet ingredients and dry ingredients.

You can also try the ever-popular Dash Waffle maker that everyone uses to make chaffles. It makes a perfectly sized waffle and doesn’t take up much space in your kitchen. If this is the first you’ve heard of this small appliance, check out this post Dash Mini Waffle Maker for Chaffles (where to buy).

WHAT’S THE BEST WAY TO STORE LEFTOVER LOW-CARB WAFFLES?

Since I like to make a big batch of waffles in one go, I freeze most of them for an easy breakfast that we can all enjoy later. Place your waffles in a freezer-friendly container, label them, and stick them in the freezer. When you’re ready to enjoy a waffle, pop them in your toaster, warm them in the oven wrapped in aluminum foil, or heat them in the air fryer. I’d advise against microwaving them, as they would lose their crispy outer layer.

HOW DO I GET THE CRISPIEST KETO WAFFLES?

There are a few tips to help ensure the exterior of your fluffy keto waffles stays nice and crispy.

1. Grease your waffle maker with coconut oil or cooking spray. This ensures that the waffles won’t stick.

2. Make sure your waffle maker heats up enough before adding the batter. It should sizzle when the batter is added to it. I let mine preheat for at least 5 minutes. This makes a major difference in how your waffle cooks.

3. Turn the waffle over with a spatula and cook it in the waffle maker for a few extra minutes.

3. Don’t stack them while you are making them, as this will cause the steam to rise and make them less crisp. I learned this the hard way. It’s best to store them in a single layer on a baking sheet at 200-250 degrees in the oven.

3. Pop them in the oven or toaster oven and bake for a few minutes. If you have an air fryer, you could use it to crisp them up a little more after being done in the waffle maker.

Tips to Changing the Flavor:

1. Vanilla extract adds flavor

2. A few blueberries to the batter to make blueberry waffles

3. Sugar-free chocolate chips make a fantastic addition

How Many Net Carbs are in these keto waffles?

Each one has 256 calories and 6 grams of carbs with 3 grams of fiber, making each 3 net carbs.

WHAT CAN I SERVE WITH LOW-CARB WAFFLES?

Serve up a heap of these keto waffles with a side of fresh strawberries, raspberries, bacon or sausage, a dollop of keto-friendly whipped cream, and/or sugar-free syrup. This easy strawberry cheesecake topping is also a great way to enjoy these waffles as they taste like strawberry jam. They are even awesome with a simple pat of butter on top. You can also use them to make sandwiches.

Can I Buy Keto Waffles?

If you still aren’t convinced they are worth the effort to make, Viking makes some that can be ordered online. I haven’t personally tried these, but I have read reviews online that they are really good.

I tripled my original recipe so that I could make enough to last for several days. If you'd like to make a smaller portion, simply divide the ingredients in this recipe by 3.

  1. Made these for breakfast this morning and my husband Liked them! He is extremely picky. Thanks for all the work you do! Blessings!

    1. I am not sure as I’ve not personally tried it. Coconut flour tends to suck up all the extra moisture in the batter and the longer it sits it will prob get worse. You could try, but I would think you’d need to add water before making them. I’m so glad you love this recipe.

  2. I have a deep Belgium waffle maker. So will using 1/3 cup of batter make a serving size for the nutritional information? I am sure that it will 1/3 cup will no where fill it up. I just want to calculate the carbs correctly.

    1. They are typically interchangeable. I cannot use almond flour due to a nut allergy. The ratio is 1 to 4 coconut to almond flour.

    1. Click on the number of servings in the recipe card and adjust it down to a number that sounds better for the two of you. Hope this helps!

  3. I tried a similar recipe and they waffles turned out like pancakes. They flattened right out, and were eggy. Did I not cook them long enough?

    1. They can be frozen in a freezer-safe container or wrapped individually. I would suggest rewarming in the oven wrapped in aluminum foil or an air fryer as they won’t be crispy otherwise.

    2. I make another waffle recipe and triple the batch. I freeze the waffles two high and 4 wide in ziplock gallon bags. I used to pop them in the toaster to reheat, but we recently got rid of it since we no longer eat bread. I’ve found 5-10 minutes @350F in my air fryer gets the job done:)

  4. I have not tried this yet as i need a sub for tree nut products. My daughter and i have an allergy to tree nuts. Can you let me know what to use as a substitute?

    1. I would talk to my allergist or research to find the right sub. My oldest daughter has very severe food allergies, so I understand how the wrong food can cause serious complications and I don’t want to be responsible for a reaction by making the wrong suggestion.
