Is This Slow Cooker Chicken Casserole with Bacon Recipe Keto?

Yes! This recipe is 100% keto. With only 2 total carbs and 1 gram of fiber, this recipe has 1 net carb making it the perfect meal on a keto/low carb diet.

Ingredients:

  • Boneless skinless chicken breasts – I prefer skinless chicken breasts; you could use boneless chicken thighs instead.
  • Butter – Butter always adds incredible flavor and needed fat for this recipe.
  • Poultry seasoning, Rosemary, Thyme, and Garlic – Spices make everything better and add great flavor. If you do not have fresh garlic, you can also use a tsp of garlic powder.
  • Chicken broth – Chicken broth adds more flavor than water when slow-cooking chicken.
  • Cooked bacon – Crispy bacon makes everything better.
  • Heavy whipping cream & Cream Cheese – Adds flavor and fat and helps thicken the sauce.
  • Cheese – Cheese is an incredible addition to this dish for an ooey-gooey cheesy chicken dish.

I made this for my family when I first found it about 1.5 years ago, and they loved it so much, the next time i made it, I had to make three batches of it because they wanted to eat on it for several days. In fact, they loved it so much, I was making it atleast once a month, until they finally got burnt out on it. Now that I haven’t made it in several months, I’m going to try and make it again.

  2. Could you please tell me the serving size for the net carb information? I couldn’t find it anywhere so I’m sorry if I’m overlooking it.

    1. Hey Brenda, there are 8 servings in this dish. Just divide it into 8 equal servings, and you are good to go. Hope you love it!

  3. It mentions this recipe is 8 servings but doesn’t say how many cups 1 serving is? I need to enter this into my Carb Manager app and need to know how much one serving actually is

    1. I just split the recipe evenly into the said number of servings. The info in the recipe card has the nutritional info for you. If you need this specific info then you may need to measure out the servings to see where they fall.

    1. I haven’t tried this recipe with bone broth. I would think it would be fine but sine I haven’t tested I can’t speak to flavor changes. Let me know how it turns out.

    1. I haven’t tried it in the instapot so not sure if this one will work. If you try it let me know how it turns out. I’m always looking to speed some dinners up in the evening.
