Is it just me, or does cauliflower tend to get a bad rap? If you ask someone their thoughts and choices when it comes to eating vegetables, more than likely cauliflower isn’t topping any of their lists. I’ll admit, cauliflower is not my favorite veggie by any means. I will only eat it if it is smothered in cheese or seasoning so that I can’t taste it. However, it is super friendly for Keto diets, so I have found ways that my family will eat it and without too much kickback. So, I made a list of 20 Tasty Keto cauliflower recipes so that even the harshest cauliflower critic might find something they enjoy.

What is Cauliflower Rice?

Riced cauliflower is the florets from a head of cauliflower that have been grated into small pieces, which look like cuscus or rice, and has the same consistency as hashbrowns.

How to Make Cauliflower Rice?

There are several different ways to make riced cauliflower. You can use a box grater, food processor, or buy it already riced. Here are several ways you can make it yourself.

  1. Cut the florets off of a head of cauliflower and use a box grater then grate the florets into small bits.
  2. If you are using a food processor, cut the cauliflower florets into small pieces, then add several cups at a time and pulse until pieces are small. You may need to do this in a couple of batches depending on how much cauliflower you use.
  3. Another great option is to buy it frozen. Several brands offer steamed riced cauliflower in the frozen section of the grocery store.
  4. You can also buy it in the produce section of your local grocery store already riced.

How to Make Cauliflower A Tasty Dish or Recipe Addition?

Cauliflower without added flavors can taste bland, but adding lots of spices such as paprika, garlic powder or salt and pepper can infuse flavor into a low carb cauliflower dish. Frying it in butter, adding cheddar cheese, or incorporating it in sauces like a low carb marinara are other great options to make it tasty.

Can You Eat Cauliflower Raw?

No. Cauliflower does not taste just like potatoes. But, it is an excellent low carb substitute. It has taken some time for me to join the Keto cauliflower bandwagon, but I have become somewhat of a fan as long as I can’t taste it.   1. Now if I could just make it softer/less “crunchy” to have a texture _closer_ to rice, it would work much better. I’ve really enjoyed the Mexican Skillet recipe, but the first time I made it the riced cauliflower was still a bit too crunchy. My oldest went back for seconds, though – after making a face about me tricking her into eating cauliflower. The youngest enjoys the cauliflower mash when I make it.
