Everyone loves a good cookie. My Keto Peanut Butter Cookie Recipe is one made with love. Created out of memories of my own mom’s cookie recipe, this is a perfect option to share with your friends and family.
Keto Peanut Butter Cookie Recipe
I love my momma’s homemade peanut butter cookies. She always made them when I was young; then she passed down the recipe to me when I got married. I’d have to say that they are probably one of my and my hubby’s most favorite cookies next to the chocolate chip cookie.
However, I don’t make them often because my oldest daughter is allergic to peanuts. When I do, I spend so much time cleaning and bleaching the kitchen that it doesn’t usually seem worth it. Thankfully, she is only allergic if she ingests peanut butter, but I am just extra cautious. Anyway, today is a lazy Saturday afternoon with football on the tv and everyone lounging around in our “quitters” (comfy clothes), so I thought I’d see if I could transform my mom’s recipe for peanut butter cookies and make a Keto Peanut Butter Cookie Recipe.
Basically, I swapped out regular flour for coconut flour and reduced the amount since it’s not a 1:1 substitution and did the same for regular sugar and Swerve. Although, they will never be as good as my momma’s they are a fabulous alternative, and they aren’t full of carbs and sugar. Having keto/low carb desserts on hand now and then sure makes following a keto lifestyle easy.

Keto Peanut Butter Cookie Recipe:
Momma's Keto Peanut Butter Cookies {keto / low carb}
Ingredients
- 1 cup Natural Peanut Butter (I use Smuckers Natural Peanut Butter)
- 1 egg
- 1/3 cup + 1 teaspoon granulated Swerve
- 1 tablespoon coconut oil
- 1 1/2 tsp coconut flour
- 1 tsp vanilla flavoring
- 1/4 tsp Xanthan Gum
Instructions
- Preheat oven to 375 degrees.
- In a bowl, combine all ingredients reserving one teaspoon of Swerve and mix well with a mixer.
- With a cookie scoop drop in balls on parchment paper on a cookie sheet (or a greased cookie pan).
- Using a fork, make a criss-cross on top of each cookie.
- Sprinkle 1 tsp granulated Swerve on the tops of the cookies.
- Bake for 7-9 minutes or until just turning brown.

Can you substitute almond flour? Have you tried?

I haven’t tried using almond flour. It is not a 1:1 substitute for coconut flour. It’s more like 1:4 so you would need to use more.

When I put this recipe in My fitness pal app it says 8 grams of carbs. I’ve noticed a discrepancy with other recipes as well. Any idea why?

Yes, MyFitnessPal isn’t a KETO app and doesn’t know to subtract the sugar alcohols from Swerve. You have to leave Swerve out of the ingredients. And, it can vary a little based on the peanut butter you use.

I am having a hard time finding Swerve in my area. I found Xyla, which says it tastes and bakes just like sugar. Could I substitute that? Have you used Xyla in other recipes?

It’s worth a try, however, I haven’t personally ever heard of it so I can’t say for sure.

They are not going to have the same texture as regular peanut butter cookies due to not having real sugar. The texture of keto baked goods is very different.

Have you tried these w/o the xantham gum? I don’t have any/have not used it and wondered what would happen if you made these without it?

Xanthan gum is a binder that helps hold foods together. They may just be a little more crumbly.

For others making these: I pull them out JUST before they start really changing color. Probably a minute before Kasey would take them out. They’re not as dry and crumbly that way but still set up when cooled.

Taste good but had to freeze as they crumbled alot. I used peanut butter with nuts as I did not have creamy peanut butter. Could that be why they fall apart/
