St. Paddy’s Day Cake Mix Bars
Jamie here! Looking for a simple and yummy treat to make on St. Patrick’s Day? It doesn’t get much easier than these St. Paddy’s Day bars that come straight from a cake mix! Just a word of warning those, these are highly addictive! Did you ever go to the Kroger Cookie Club when you were a kid and get the free m&m sugar cookies they handed out? That’s what this reminds me of – almost exactly! Even if you weren’t lucky enough to visit the Kroger cookie club – I promise you’ll be reaching in the pan over and over again….
How to make St. Paddy’s Day Cake Mix Bars: Just get a classic white cake mix and add a half cup of sugar (cake mixes just aren’t quite sweet enough on their own 😉 ) Next, stir in 1/2 cup of vegetable oil and 2 eggs. Mix together with a spoon until it forms a sticky batter, and then stir in a teaspoon of vanilla. Spread this thick mixture into a greased 9×13 pan and sprinkle m&m’s evenly over the top. Press it down with the palm of your hand until it’s all about flat. Pop it into the oven for half an hour and voila! Your St. Patrick’s Day just got a little more green!
NOTE: When you first pull these out, let them cool for about 20 minutes before cutting into them. The middle will be a little gooey at first but will firm up just fine after setting for a bit. 🙂 ENJOY!
