Chicken & Mushroom Gravy {Keto/Low Carb}

My Keto Chicken with Mushroom Sauce Recipe is one of my favorite fast meal options. You can make this so easily and serve with your favorite low carb and keto sides. If you love a nice creamy mushroom gravy, you are going to love this recipe!

  • 1 1/2 lb boneless skinless chicken breasts (or thighs)
  • 1/2 cup diced onion
  • 2 garlic cloves, minced
  • 8 oz mushrooms chopped
  • 2 tbsp butter
  • 1 cup chicken broth
  • 2/3 cup heavy whipping cream
  • 1/4 cup parmesan cheese, grated
  • 1/2 tsp oregano
  • 1/4 tsp thyme
  • 1/4 tsp parsley
  • 1/2 tsp xanthan gum


  • Saute onion, garlic, and mushrooms in 1 tbsp butter in a cast iron skillet. approx 6 minutes or until they are cooked through.
  • Remove the veggies from pan and set aside.
  • Add 1 tbsp butter to the skillet then brown chicken breasts on both sides.
  • Add veggie mixture back to pan.
  • Add all other ingredients then simmer on medium-low for 20 minutes with lid on.
  • Remove lid and add 1/2 tsp xantam gum then simmer on medium/low until sauce thickens.
