Pool Party Fish Cake Recipe (Great for Father's Day too!)

Ingredients

  • 2 Round Cakes made according to box directions
  • Canned Frosting or make your own Buttercream Icing
  • Food Coloring
  • Swedish Fish
  • White Sixlets or other Decorative Balls

Instructions

  • First, make a cake mix according to directions on box in two round cake pans and allow to cool completely.
  • Start by making 2 Cups of buttercream frosting*, or use 2 Containers of canned frosting.
  • Using food coloring, dye 3/4 of the frosting blue, and 1/4 green.
  • Spread the blue frosting over the entire cake
  • Spoon the green frosting into a piping bag with a Petal Tip (if you have one).
  • Mine was dented in the middle from a garbage disposal accident – but in the end that made my seaweed even better.
  • Pipe what is essentially a messy “ruffle”along the bottom half of the cake, and then add seaweed growing up from this ruffle.
  • Your seaweed doesn’t have to be perfect, I let my 10 year old do a few of ours!
  • Just drag the piping bag upward and wiggle your hand back and forth a little to give it an imperfect, ruffly effect.
  • Add a few Swedish Fish swimming around. (Push them in deep, so they don’t just fall off when the icing dries)
  • Using white Sixlets or decorator’s balls, add bubbles.
  • You can also save a little white icing and make bubbles by dotting icing on with a round tip.
  • Use the remainder of your green frosting (You will likely have some left over) to grow some seaweed along the sides of your cake or you could just add a seaweedy edge to the bottom of the cake.

Buttercream Frosting:

  • Stick softened butter
  • Cups Powdered/Confectioner's Sugar
  • TBSP Vanilla Extract
  • A few TBSP of Milk (Add as you need if it's too dry to mix)
