Oven "Not Fried" Okra Recipe

Ingredients

  • okra sliced thinly
  • 1 egg
  • milk amount will vary depending on size of containor and how much okra you are preparing
  • 1 cup corn meal
  • 1 cup all-purpose flour
  • 1/2 tsp peper
  • 1 tsp seasoning salt
  • olive oil mister or cooking spray

Instructions

  • Wash okra thoroughly and pat dry.
  • Slice into thin slices (I cut a little thinner than I would for fried okra).
  • Add an egg and milk to a shallow dish and stir to combine. Add okra to the egg and milk mixture. You may need to add extra milk so that all of the okra is covered. Put in fridge for about 30 minutes.
  • Add 1 cup cornmeal, 1 cup all-purpose flour, 1/2 tsp pepper, and 1 tsp seasoning salt together on a plate and mix well.
  • With a slotted spoon remove okra from egg bath and dredge in flour.
  • Evenly spread okra on a greased cookie sheet. I cover my pan with tin foil for easy clean up.
  • Spray okra generously with an olive oil mister or cooking spray.
  • Bake in a 400 degree oven for 10 minutes or until you start to see the okra brown on the bottom. Turn the okra over and spray the other side with an olive oil mister or cooking spray. Cook an additional 10 minutes or until the other side browns.
