  • 8 oz block of reduced fat extra sharp cheese or your favorite flavor
  • 1 cup whole wheat flour
  • 4 tablespoons butter
  • 2-4 tablespoons ice water
  • 3/4 teaspoon sea salt

  • If you have a food processor, first chop cheese into cubes, then add, flour, butter, and salt to food processor until combined. Will look like coarse crumbs.

  • If you don't have a food processor, you can use a mixer. I would suggest grating your cheese first.
  • Slowly add ice water one tablespoon at a time until dough comes together to form a ball (I used 4 tablespoons).

  • Wrap ball of dough in plastic wrap or wax paper and refrigerate for 30 min.
  • Roll on a floured surfaced until very thin, approx 1/8 inch then cut into squares. I used a pizza cutter to cut my dough, but you could also use a pastry wheel to make fluted edges or a square cookie cutter.

  • Poke a hole in the center of each to keep from puffing up to much. You could use a skewer or toothpick.
  • Sprinkle with a little sea salt and paprika (if desired) bake on a greased cookie sheet or parchment paper for 12-15 minutes until slightly browned.
