Preheat oven to 350 degrees.
If you have a food processor, first chop cheese into cubes, then add, flour,butter, and salt to food processor until combined. Will look like coarse crumbs.

If you don't have a food processor, you can use a mixer. I would suggest grating your cheese first.
Slowly add ice water one tablespoon at a time until dough comes together to form a ball (I used 4 tablespoons).

Wrap ball of dough in plastic wrap or wax paper and refrigerate for 30 min.
Roll on a floured surfaced until very thin, approx 1/8 inch then cut into squares. I used a pizza cutter to cut my dough, but you could also use a pastry wheel to make fluted edges or a square cookie cutter.

Poke a hole in the center of each to keep from puffing up to much. You could use a skewer or toothpick.
Sprinkle with a little sea salt and paprika (if desired) bake on a greased cookie sheet or parchment paper for 12-15 minutes until slightly browned.
