French Toast {Keto / Low Carb}

My Family Size Low Carb French Toast is a great recipe to make for weekend brunch. Just because you are following the keto diet doesn't mean you can't have a great family breakfast on the weekends. Serve up with a side of bacon, sausage, or ham for a delicious meal that stays within your macros.

For the Bread:

  • Preheat the oven to 350 degrees.
  • Melt butter and cream cheese together.
  • Add all other ingredients and stir. (If butter and cream cheese are very hot, you may want to let them cool for about 5 minutes before adding other ingredients so that the hot butter doesn't scramble the eggs.)
  • Grease a loaf pan or line loaf pan with parchment paper. I lined mine with parchment paper and would recommend doing the same.
  • Pour batter in the loaf pan and bake for 40-50 minutes or until a knife inserted in the center comes out clean.
  • Allow bread to cool for a few minutes, then remove from pan and slice.,

For the French Toast:

  • In a casserole dish, add eggs and heavy whipping cream.
  • Whip with a whisk until thoroughly combined.
  • Dip bread slices in egg mixture and turn to coat both sides.
  • Melt butter in a skillet or on a griddle.
  • Fry the bread dipped in the egg mixture in butter, browning each side.
  • When brown on both sides, remove from pan and sprinkle Swerve Confectioners Sweetener on top.
  • Serve with a few berries or sugar-free syrup.
