Keto Oven-Baked Pork Chops Recipe with Broccoli One Pan Meal

Ingredients

  • 8 center cut thin boneless pork chops
  • 4 cups fresh broccoli, chopped
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup parmesan cheese, grated
  • 3/4 cup mozzarella cheese, grated
  • 6 garlic cloves, minced
  • 1 tbsp parsley
  • 3/4 tsp thyme
  • 1/2 tsp pink salt (or regular salt)
  • 1/4 tsp pepper
  • 1 tsp parsley (for topping pork chops after they are baked)

Instructions

  • Preheat oven to 400 degrees.
  • Wash and chop fresh broccoli then pat dry.
  • Cover baking sheet (cookie sheet size) with parchment paper or grease.
  • In a bowl combine melted butter, olive oil, parmesan cheese, minced garlic, and spices (except the second parsley listed at the bottom of the ingredient list that is reserved for sprinkling on pork chops when they are done).
  • Place pork chops in the middle of the baking sheet.
  • Brush one third to half of the spice, oil, butter, and parmesan cheese mixture on the top of the pork chops.
  • Spoon the remaining spice mixture over the broccoli in a bowl and toss until evenly coated.
  • Place the broccoli all around the pork chops. The sheet pan will look very full, but as the pork chops and broccoli bakes, they will shrink in size. Cover the pan with aluminum foil.
  • Bake for 5 minutes then remove the aluminum foil and bake for 5 more minutes.
  • Sprinkle the mozzarella cheese on top of the pork chops and turn broccoli over, so both sides bake evenly then return to the oven.
  • Continue baking for 10-12 minutes or until done. I use a meat thermometer as all ovens bake differently. The internal temperature should read 145 degrees.
  • Turn oven to broil, and move pan to the top shelf. Broil for 1-2 minutes so that the mozzarella cheese begins to bubble and brown. Leave the oven door slightly ajar while broiling as it helps the food to brown without steaming. Watch carefully as the pork chops and broccoli can burn quickly. Be especially mindful if you use parchment paper when broiling. Depending on your oven, broiling temperatures can reach up to 550. Typically, I have noticed that my parchment paper begins to turn brown when broiling. I would not broil for longer than suggested if using parchment paper and I would watch VERY carefully.
  • Remove from the oven and let oven-baked pork chops rest for 3 minutes then sprinkle the remaining 1 tsp parsley on top.
