  • Preheat your waffle maker or "chaffle" maker. Using a basic round mini waffle maker like the Dash brand, lightly grease or spray the plates with cooking spray to prevent sticking.
  • Crack one large egg into a small mixing bowl and beat lightly with a fork. Add two tablespoons of shredded mozzarella cheese to the beaten egg. Stir to combine.
  • Add two tablespoons of unsweetened cocoa powder. Stir until thoroughly blended into the egg and cheese.
  • Measure two tablespoons of Lakanto Monkfruit sweetener powder and stir into the mixture to combine. Then, add one teaspoon of coconut flour and stir until there are no lumps.
  • Add the rest of the ingredients and stir until combined.
  • Carefully spoon half the batter onto the bottom cooking plate of your preheated waffle maker. Close the waffle maker gently and cook the chaffle for 4 minutes.
  • Carefully remove the cooked chaffle and repeat to cook the second chaffle with the remaining batter. Serve warm with sugar-free whipped cream or ice cream if desired.

Notes

How to store:
  • Allow chaffles to cool completely on a wire rack before storing. This prevents condensation, which can make them soggy.
  • Then, place them in a sealable container or plastic bag. Make sure there is no air trapped inside.
  • Store at room temperature for 2-3 days, in the refrigerator for 5-7 days, or in the freezer for 2-3 months.
  • Frozen is best for long-term storage.
Reheating And Serving:
  • Oven - Preheat oven to 300°F. Arrange chaffles on a baking sheet and warm in the oven for 3-5 minutes until heated.
  • Microwave - Reheat refrigerated or room temp. chaffles on a microwave-safe plate for 15-30 seconds at a time, checking often to avoid overcooking.
