In a small bowl, combine the softened butter, eggs, and Lakanto Maple Syrup. Combine with a mixer on medium speed.
In another bowl, add Lakanto Monkfruit Golden, coconut flour, and chopped pecans. Stir to combine.
Add the butter mixture to the dry ingredients and mix on medium speed until combined.
Line a mini muffin pan with parchment paper liners. I use these.
Scoop batter into muffin tins. (I made 30 muffins)
Bake for 13-15 minutes.

The sugar alcohols from the Lakanto Monkfruit Golden and Lakanto Monkfruit Sugar-Free syrup are not included in the nutritional information since most subtract to calculate net carbs. The nutritional info provided is based on making 30 mini muffins with a serving size of 3 muffins.
