Baked Chicken Drumsticks w/ Marinade (Low Carb)

This simple, oven-baked Low Carb Chicken Leg recipe is perfect for any keto meal! The chicken skin comes out nice and crispy, while the inside stays incredibly moist and juicy. Marinated in a lemon-herb oil, you will definitely want to keep this recipe handy!

Ingredients

  • 10 Drumsticks approx. 4 lbs

Marinade

  • 1 stick of butter melted
  • cup olive oil
  • 4 garlic cloves minced
  • 1 tbsp fresh lemon juice
  • ½ tsp parsley
  • ½ tsp onion powder
  • ½ tsp oregano
  • ¼ tsp rosemary
  • cup chicken broth
  • salt & pepper
  • Optional: chopped fresh parsley for garnish

Instructions

  • Lay your chicken legs out and pat them dry with a paper towel. This will help the marinade stick. Then season them liberally with salt and pepper.
  • In a small bowl, whisk together all of the marinade ingredients.
    If you have time to marinate the chicken, place it in a Ziploc bag or large bowl with the marinade and place in the fridge for at least 30 minutes to 12 hours. (Keep in mind that the butter will solidify in the fridge but will melt when you put the drumsticks in the oven to bake).
  • Massage the marinade into the chicken by pressing on the outside of the bag for a few minutes so that all of the drumsticks are coated.
  • When you are ready to bake the drumsticks, preheat your oven to 425°F and grease a 9" x 13" baking dish and add your drumsticks inside. Alternate the direction of your drumsticks, so all ten fit nicely.
  • Pour the marinade over the drumsticks.
  • Bake uncovered for 30 minutes on the middle rack and then turn the drumsticks over and bake for another 10-15 minutes or until a digital thermometer reads an internal temp. of 165 °F.
  • Move the chicken to the top rack and broil if needed to brown the skin.

Notes

Feel free to marinate the chicken overnight if you wish. Just try to keep the marinating time under 12 hours.
