Cheesy Baked Low Carb Burritos with Ground Beef

Easy and delicious low-carb burritos with delicious taco meat make an excellent and quick low-carb Mexican dinner.

Ingredients

  • 1 lb ground beef
  • 2 TB homemade taco seasoning or taco seasoning packet
  • cup beef broth
  • 8 Low Carb Tortillas
  • 1 cup White Cheddar Cheese shredded
  • 1 cup Yellow Cheddar Cheese shredded
  • Taco garnishes - cilantro, lettuce, tomato, etc

Instructions

  • Preheat the oven to 350 degrees.
  • Brown the ground beef in a skillet on the stove over medium heat. Drain any excess liquids.
  • Next, add homemade taco seasoning or a taco seasoning packet and beef broth and bring to a boil. Simmer over medium heat for 5 minutes with the lid off to infuse the seasoning with the ground beef.
  • Remove the lid and continue simmering until the taco meat reduces and becomes thick. You don’t want it liquidy. It should be nice and thick.
  • Layer the taco meat and a little cheese in each tortilla, then roll into a burrito shape, placing the seam side down.
  • Sprinkle the remaining cheese on top of the burritos and then bake for 10 - 15 minutes or until the cheese browns on top and the burritos start to crisp.
  • Garnish the top with chopped cilantro, lettuce, tomato, or other favorite toppings.
