Keto Spinach Salad with Hot Bacon Dressing

Keto Spinach Salad Ingredients

  • 9 - 10 oz fresh spinach
  • 6 ripe strawberries, sliced
  • 1/3 cup red onion, sliced
  • 1/2 cup feta cheese
  • 2 boiled eggs, chopped

Keto Hot Bacon Dressing Ingredients

  • 8 slices bacon
  • 2 cloves garlic minced
  • 2 tbsp finely chopped onion
  • 1/3 cup bacon fat
  • 1 tbsp yellow mustard
  • 2 tbsp Lakanto Monkfruit Golden
  • 1/2 cup water
  • 1/3 cup red vinegar
  • 1/4 tsp Italian seasoning
  • 1/4 tsp pepper
  • salt to taste


Spinach Salad Instructions:

  • In a large bowl, add fresh baby spinach leaves.
  • Slice strawberries and purple onion.
  • Chop the bacon, then saute it in a skillet until very crisp.
  • Add the strawberries and purple onions to the salad.
  • Sprinkle fresh crumbled feta cheese and chopped boiled egg on top.

Hot Bacon Dressing Instructions:

  • Remove the bacon from the grease and set it aside on a plate covered with paper towels to absorb excess oil, so it continues to crisp. Once it has cooled to the touch, crumble into smaller pieces.
  • Keep 1/3 cup of the bacon grease in the skillet and remove the rest if there is any excess. It should render approx 1/3 cup.
  • Add the fresh minced garlic and chopped onion to the skillet and saute in the bacon grease until the onion is translucent.
  • Add all of the other ingredients and bring to a boil. Boil uncovered for 5 minutes or until the Low Carb Hot Bacon Dressing reduces, stirring with a whisk to avoid sticking to the pan.
  • Remove from heat, add the crumbled bacon to the dressing, and stir until thoroughly combined.
  • To serve after being refrigerated, you will need to rewarm and add additional water since the bacon grease will become firm in the fridge.
