Unstuffed Cabbage Roll Soup (Easy and Low-Carb)

Instant Pot Method (My personal favorite for busy nights)

  • Brown the beef: Turn the Instant Pot to Sauté. Add ground beef, onion, and garlic. Cook until the beef is nicely browned (browning adds richer flavor), then drain excess grease.
  • Add remaining ingredients: Return the beef mixture to the pot and stir in broth, tomatoes, tomato sauce, aminos, cabbage, Worcestershire, parsley, salt, and pepper.
  • Pressure cook: Lock the lid, turn off Sauté, press the Soup button, and set to 15 minutes.
  • Release: Once the cycle is complete, do a quick release. I always place a dish towel over the valve to safely control the steam.
  • Serve: Stir, taste, and adjust seasoning if needed — cabbage absorbs salt as it cooks.

Crockpot Method (Best for set-it-and-forget-it days)

  • Brown the ground beef, onion, and garlic on the stovetop; drain well.
  • Add the cooked beef and all remaining ingredients to the Crockpot.
  • Cook 3–4 hours on high or 6–7 hours on low, until cabbage is soft and flavors are blended.
  • Taste and adjust seasoning before serving.

Stovetop Method (Simple + reliable)

  • In a large stockpot, brown the ground beef with onion and garlic; drain.
  • Add in broth, tomatoes, tomato sauce, aminos, cabbage, Worcestershire, parsley, salt, and pepper.
  • Cover and simmer 45 minutes to 1 hour, stirring occasionally, until the cabbage is tender and the soup has thickened slightly.

  • For a thicker, more “stuffed cabbage roll” feel, simmer uncovered for the last 10 minutes.
  • Add cauliflower rice if you miss the rice found in traditional cabbage rolls.
  • This soup makes excellent leftovers. The flavors deepen overnight.
  • Adjust salt at the end; cabbage absorbs seasoning as it cooks.
  • Freezes well for up to 3 months.
