Preheat oven to 375 degrees. Cook chicken breasts in slow cooker for 3 hours or 6 hours, adding broth and salt. Shred, use thighs, whole chicken, or skip preparing chicken and use rotisserie.
Combine butter, cream, garlic, and Italian seasoning in a saucepan. Add cream cheese, stir, and cook over low-medium heat until smooth. Reserve 1/4 cup cheddar and 1/8 cup other cheeses for topping.
Prepare a 9x13 casserole dish by layering shredded chicken, steamed broccoli, and pouring cheese sauce over the dish, ensuring it's completely covered.
