Cauliflower Mac N Cheese
I never realized how amazing a Keto Cauliflower Mac and Cheese recipe could be! Everyone said versions of this could be good, but I was dubious. This recipe changed my mind. This is truly amazing and a wonderful substitute for traditional pasta recipes.

- 2 heads fresh cauliflower (approx 8 cups chopped)
- 2 tbsp butter
- 1 block cream cheese
- 2 cups heavy whipping cream
- 12 oz sharp cheddar cheese, grated
- 4 oz mozzarella cheese, grated
- 4 oz parmesan cheese, grated
- 1 tbsp garlic powder
- 1 tbsp Italian Seasoning
- 1 tsp paprkia
- 1 tsp parsley
- salt/pepper to taste
Preheat oven to 375 degrees and grease a 9 X 13 casserole dish.
Wash cauliflower and cut into bite-size florets (so that it resembles the size of mac noodles).
Add 1/4 cup water to a bowl with cauliflower and microwave for 10 minutes then drain.
In a saucepan, add butter, heavy whipping cream, and garlic. Add softened cream cheese and stir with a whisk until thoroughly combined.
Then, add cheeses stirring constantly reserving 1/4 cup of cheddar cheese for topping.
Pour cheese mixture over cauliflower and stir until thoroughly covered.
Pour into casserole dish.
Top with the 1/4 cup reserved cheese and paprika, Italian seasoning, and parsley.
Bake for 25 minutes. Enjoy!
