Instructions

  • In a cast-iron skillet, sauté onion, garlic, and mushrooms in 1 tbsp butter over medium heat for 6–7 minutes, until tender. Remove and set aside.
  • Add remaining 1 tbsp butter to the skillet and sear chicken breasts on both sides until light golden.
  • Return the sautéed veggies to the skillet.
  • Stir in chicken broth, heavy whipping cream, Parmesan, and seasonings.
  • Cover and simmer on medium-low heat for 20 minutes.
  • Remove lid, sprinkle xanthan gum over the sauce, and simmer uncovered for 8–10 minutes, or until the sauce thickens and the chicken is cooked through.

Notes

  • Want a smoother sauce? Chop mushrooms finely (great for picky eaters!).
  • Sauce too thick after chilling? Add a splash of broth or cream when reheating.
  • Serving ideas: cauliflower mash, sautéed green beans, roasted broccoli, or zoodles.
  • This recipe freezes well. Store up to 2 months and reheat gently.
