In a cast-iron skillet, sauté onion, garlic, and mushrooms in 1 tbsp butter over medium heat for 6–7 minutes, until tender. Remove and set aside.
Add remaining 1 tbsp butter to the skillet and sear chicken breasts on both sides until light golden.
Return the sautéed veggies to the skillet.
Stir in chicken broth, heavy whipping cream, Parmesan, and seasonings.
Cover and simmer on medium-low heat for 20 minutes.
Remove lid, sprinkle xanthan gum over the sauce, and simmer uncovered for 8–10 minutes, or until the sauce thickens and the chicken is cooked through.
- Want a smoother sauce? Chop mushrooms finely (great for picky eaters!).
- Sauce too thick after chilling? Add a splash of broth or cream when reheating.
