  • Wash and dry your cucumber. Then, slice it into 6 or 7 long, thin strips, using a veggie or a mandoline slicer to
  • Dry your peeled cucumber slices by padding them with a dry paper towel. Next, arrange them next to one another, slightly overlapping. Then, spread your mayonnaise evenly across the strips.
  • Arrange your shredded chicken diagonally across the mayo-covered cucumber. Add the buffalo sauce, chopped celery, and red onion across the cucumber slices. Add salt and pepper to taste.
  • Roll the cucumber slices tightly and secure them with a toothpick in order to hold their shape.
  • Arrange on a plate and garnish with chives and fresh dill, according to your preference. Enjoy!

  • Choose firm cucumbers: Select cucumbers that are firm and without soft spots. This ensures they will hold their shape well when rolled.
  • Use precooked chicken: To save time, opt for precooked chicken. You can use rotisserie chicken, leftover grilled chicken, or canned chicken. I batch-cook shredded chicken in the crockpot to keep on hand. 
  • Roll tightly: Roll the cucumber strips around the filling as tightly as possible without tearing the cucumber. This ensures the rolls hold together well.
