Cake Mix Cookie Bars Recipe
Here’s a super-handy recipe for Cake Mix Cookie Bars!
Having kids in school means lots of parties, banquets and the giving of teacher appreciation gifts. If you need a quick easy idea for a treat to bring, you may want to try out these Cake Mix Cookie Bars! This recipe is so easy and quick – it’s my go-to recipe when it come to last-minute classroom treats.
Plus – you can customize it with any flavor cake mix (Chocolate for brownie-like bars, orange or lemon for summery bars!)
You’ll Need:
- 1 Cake Mix
- 1/2 Cup vegetable oil
- 1/2 Cup Sugar or Brown Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- 1 Cup Chocolate Chips, M&M’s or other candy toppings
Directions:
Preheat oven to 350. Mix ingredients together and spread into a 9×13″ pre-greased Pan. Bake for 25-30 Minutes. Cut into bars.
These also make great school lunch treats or handy bars to bring to a picnic or outing at the park. I made these for the kids lunches this week and tossed them into Ziploc bags, then stored them in a big bowl to make packing lunches in the mornings easy-peasy!

Mine cookie bars are coming out kind of hard/crummy what am I doing wrong? 🙁
Hm, I’m not sure Barbara. I would reduce your cooking time by about 5-10 minutes, it’s possible your oven runs hotter than mine. It’s also possibly a difference in cake mixes, perhaps mine was a “pudding in the mix” extra moist kind of mix? Sorry to hear that – let me know if you make them again and either of these tweaks helps!
Easy enough for me to do and they look yummy!
I just made these with a Duncan Hines mix, not one with pudding, and added white chocolate chips. These are fabulous and the potential combinations are endless. Thanks for this easy and wonderful recipe.

I made these M&M. Bars last week and they were the best bar treats we ever had. They seemed easy and they were. My husband loved them, my Kali and Kayden gave me thumbs up Grandma. And my Daughter thought they were the perfect texture, she wandered if you could make cookies with the recipe? I did miniature M&M’s and some chocolate chips. Excellent recipe, will be making them a lot.

I made these bar cookies but added 2/3 cup oatmeal.1/3 cup coconut, 1 tsp extra vanilla and 1 tsp cinnamon 1/4 c water //They were outstanding!! The Cake mixes do make a slight difference but once they are completely cooled they are wonderful. Can’t wait to try other flavors! Thank you so much for sharing your recipe. They were gobbled up so fast I never had time to take a photo.
