This Keto Slow Cooker Pork Roast is a simple but tasty low carb dinner option that you can set and forget! Seasoned with spices and cooked in a flavorful broth, you will love how moist and juicy this pork comes out!

How to make roast pork using your slow cooker

I love keto crock pot recipes. They are so simple, save me so much time, and always come out delicious and full of flavor. For this low carb pork roast, I used a boneless pork butt because it always yields a super flavorful and juicy pork. After a few hours, your pork will be so tender it will fall apart. Cooked in yummy spices, you will be left with delicious pulled pork soaked in a flavorful gravy to top it with.

I love serving this roast pork recipe alongside my Keto Green Bean Casserole or my Low Carb Roasted Cauliflower.

Keto pork roast ingredients

  • Pork buttThis cut of meat is my preference for this recipe. See my other recommended cuts below!
  • ButterThe butter adds delicious flavor and fat.
  • Chicken brothThe broth is the base of your sauce and adds lots of moisture and flavor. You can use pork, beef or veggie broth too.
  • SeasoningsThis is like your “dry rub” and how we kick up the flavors in our roast!

Steps for making your roast

Step 1: Salt and pepper your roast liberally and sear it in a hot cast-iron skillet on all sides.

Step 2: Add the pork roast and the leftover butter and bits from the bottom of the skillet to a slow cooker. Cook on high for 6-7 hours or until it begins to fall apart.

Step 3: Shred with two forks then add back to your slow cooker for 30 minutes to an hour on high. Allowing it to sit in its juices will further tenderize it.

Step 4: Serve in its juices garnished with freshly chopped parsley.

Pork roast options

There are a few different pork options you can slow roast instead of pork butt. Just keep in mind that when choosing your cut of meat, don’t shy away from those covered in fat. The fat will help keep the pork nice and juicy while adding a ton of flavor. Here are other great pork cuts:

  • Pork shoulder
  • Pork belly
  • Pork legs

You can also use pork loin (aka tenderloin), but keep in mind that it will not give you the same juicy results. Tenderloin is leaner and has less fat than the other cuts.

How to turn your sauce into a gravy

The juices that result from slow cooking adds lots of flavor and moisture to your pork. If you want to thicken it up just a bit and intensify the flavors, add the juices to a saucepan and simmer on medium heat until it reduces by half.

If you want it thicker and more gravy-like, add an ounce of cream cheese, 3 TB heavy whipping cream, and approx 1/4 tsp of Xanthan Gum. Then simmer on medium heat until it reaches desired consistency. You can always add more xanthan gum, but only 1/4 tsp at a time as it can yield a slimy texture if you use too much. (Xanthan Gum is a keto-friendly thickener). It will turn into a creamy and flavorful gravy after a few minutes

Make your pork roast in advance

This pork roast can be made in advance and stored in the fridge for 3-4 days in a sealed container. You can also freeze it for up to 8 weeks in a sealed freezer-safe container.

How long does it take to cook pork in your slow cooker?

Depending upon the size of your pork, it will take anywhere from 6-8 hours.

Do I have to sear my pork before placing it in the slow cooker?

No, but it helps intensify the flavors immensely while locking in the moisture.

Can I overcook my pork?

It is almost impossible to overcook pork butt in the slow cooker, especially if it sits in its juices!

Could I use different broths or stocks as my liquid?

Yes. Choose whichever broth you prefer and have on hand. Homemade broth would be delicious!
