We had my husband’s office Christmas party this week and ended up taking home a big plate of ham and broccoli that was leftover. When it started snowing this morning, I knew I needed a warm, cozy fire and a big hearty bowl of hot soup. I remembered all the ham and broccoli I had in the fridge, so I decided to create a Cheesy Ham Chowder. It turned out so yummy, and I was able to use up all of our leftovers without my kids complaining. I thought about adding riced cauliflower to mimic potatoes, but the broccoli was a fabulous addition instead. This Cheesy Ham Chowder turned out so hearty and delicious! It’s perfect for a cold winter day.
