Frozen green beans – Using frozen green beans keeps this recipe simple and convenient. They cook up tender right in the crockpot without any extra prep.
Chicken broth – Adds moisture and helps build a flavorful sauce.
Soy sauce – You can swap it for coconut aminos if you need a gluten-free option.
Sesame oil – Brings a rich, toasty flavor that’s so good in this recipe.
Apple cider vinegar or white wine vinegar – Adds just a touch of acidity to balance out the sweetness.
Keto-friendly Honey or keto-friendly sweetener – If you’re keeping it low carb, make sure to use a sugar-free option.

How to Make Keto Slow Cooker Honey Garlic Chicken and Green Beans

This is one of those super simple recipes where the slow cooker does most of the work, which is my kind of cooking! I love how this low-carb slow-cooker chicken and green beans recipe fills the kitchen with the best cozy, savory smell all day long. Make sure to scroll to the bottom of this post for the printable recipe card with the detailed ingredients and instructions.

Step 1: Start by placing the chicken tenders at the bottom of your crockpot.

Step 2: In a small bowl, whisk together the chicken broth, soy sauce, sesame oil, apple cider vinegar, low-carb honey substitute, dried ginger, minced garlic, onion powder, black pepper, and a little red pepper flakes if you like a little heat. (If not, you can leave them out — totally up to you!)

Step 3: Pour the sauce evenly over the chicken. Cover the crockpot and let the chicken cook — about 5 hours on LOW or 2.5 hours on HIGH.
(You don’t have to do a thing during this part — just set a timer and let it work its magic!)

Step 4: Once the timer goes off, add the frozen green beans right into the crockpot.
Give everything a gentle stir to coat the green beans in that delicious sauce.
(If you’re anything like me, the smell alone will have your mouth watering long before it’s done.)

Step 5: Cover and continue cooking — 1 more hour on LOW, 30 more minutes on HIGH, or until chicken is cooked through and green beans reach desired tenderness. I am a southern girl, so I don’t like my green beans crisp, but my Ohio husband does, so we meet in the middle and cook them sorta crisp. 😊

Step 6 (optional): When the chicken is cooked through and the green beans are nice and tender, you can thicken the sauce if you’d like. Just stir together the cornstarch and water to make a quick slurry, then pour it into the crockpot.

If you avoid cornstarch, lightly sprinkle 1/4 teaspoon of xanthan gum over the sauce for a more low-carb friendly option while stirring. Cover and cook for another 15–30 minutes, until the sauce thickens to your liking.

Step 7: Serve hot, and if you’re feeling a little fancy, sprinkle some sesame seeds and sliced green onions on top. Enjoy!
