Quick & Easy Low Carb Chili Casserole

One of the best comfort foods I can think of is a piping hot bowl of chili. It’s great for any occasion and any time of year. We’re always searching for modifications of recipes we already love. Since we enjoy chili so much, why not turn a low carb casserole with hamburger dish into a chili casserole? Perfect! This Low Carb Chili Casserole recipe is a fun twist on my Easy Keto Chili.  I’m sure you’ll enjoy this delicious, quick, and easy dish as much as we do!

Can I Eat Chili on a Low Carb Diet?

Yes! You can eat chili on a low carb diet. Words we love to hear! Most traditional chili recipes are high carb and not keto-friendly because of kidney beans. This chili casserole has been tweaked to make it low carb. It is so chunked full of other yummy ingredients; you won’t even miss the beans. When doing your meal planning for the week, this is one keto recipe you will want to add.

With a large family, I am always looking for ways to complete tasks in an easier and faster way. One thing that has helped tremendously is to brown my ground beef in advance. What a huge time saver! Just take a package out of the freezer. Add ground beef to your pan, along with your onion, bell peppers, and garlic. Simple! Chili powder is the spice you typically think of when making chili. Don’t skimp on using spices, even in chili. Along with other spices, I add Rotel Tomatoes (diced tomatoes with green chilis) and tomato sauce to the beef mixture. Your kitchen will be filled with a fragrant, enticing aroma from this Low Carb Chili Casserole. You’ll be anxious for this to finish baking so you can take a bite of this mouthwatering dish.

Tip: If you happen to boil your chili down too far and it gets too thick just add a splash of beef broth.

Cheese is always a great topping for casseroles. I typically use Cheddar Jack cheese (a combination of Cheddar and Monterey Jack). Of course, you can use any variety you prefer. I love to grate my cheese but, if you’re in a hurry, you can always use pre-packaged grated cheese. Keep in mind that pre-packaged cheese contains added fillers to keep it from sticking together that add to the carb count. I know that not everyone has time to hand grate cheese, and it is an option.

What Size Baking Dish Do I Use for Low Carb Casserole Ground Beef Chili Recipe?

I used an oval 2.5-quart dish, which is the same as a 9″ x 9″ baking pan. I baked the dish for 25 minutes and then let it rest for 5 minutes before serving. Of course, cooking times on ovens vary so you will need to adjust accordingly.

What Can I Serve with this Low Carb Casserole Recipe?

When I’m asked this, I always answer back with a question. What are your favorite veggies? We enjoy broccoli, brussels sprouts, zucchini, squash, and green beans, to name a few. I had some squash and zucchini that I needed to use, so I sauteed some in a little butter. You could keep it simple and make a garden salad and my Cheesy Garlic Bread Keto Chaffles to serve with this low carb chili recipe.

How Many Net Carbs in Low Carb Chili Casserole?

A generous serving size of this keto chili casserole recipe is only four net carbs. I divided the recipe into six equal-sized servings, and the nutritional information provided on the recipe card is for one serving.

Can You Make This Recipe in a Slow Cooker?

While I love using a slow cooker, I have not tested this particular recipe. It might have a bit more liquid in the chili since the slow cooker typically doesn’t allow liquids to evaporate as much as boiling on the stove. I would cook for 2 hours on high or 4 hours on low, then add the cheese and pop the lid back on. As soon as the cheese melts the low carb chili casserole is done.

Quick & Easy Low Carb Chili Casserole

Ingredients

  • 1.25 lb ground beef
  • 1/4 onion, chopped
  • 1/4 yellow bell pepper, chopped
  • 1/4 orange bell pepper, chopped
  • 1 garlic clove, minced
  • 1 tbsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp oregano
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 can Rotel Tomatoes (diced tomatoes with green chilis)
  • 1/4 cup canned tomato sauce
  • 1 tbsp Bragg's Aminos
  • 2 cups Cheddar Jack Cheese

Instructions

  • Preheat oven to 350 degrees. In a skillet, brown ground beef with onions, peppers, and garlic then drain.
  • Add spices, Rotel Tomatoes, tomato sauce, and Bragg's Aminos then bring to a boil and simmer for 5 minutes uncovered.
  • Grease a casserole dish. I used a 2.5 qt oval baking dish (you can also use a 9 X 9 square cake pan). Pour ground beef mixture in a baking dish and top with shredded cheese.
  • Bake for 25 minutes then let rest for 5 minutes before serving.
  • Enjoy!

The nutritional information provided is for 1/6 of the casserole. I divided the casserole evenly into 6 servings.

    Again! Another outstanding keto friendly recipe from Kasey. I fallowed this recipe exactly with double the ingredients. I have found many other “Keto Friendly” blogs and web pages to result in disappointed taste buds. Comfort foods on Keto are a challenge. But, Kasey Tatum is my go to for 100% tastebud satisfying Keto recipes. Thank you Kasey. I absolutely love your recipes and your site.

    1. You can buy them at Walmart and WinCo usually in the Asian foods ( soy, teriyaki, rice wine section.

      Also grate up zucchini and add in…nobody will notice!!

  2. Do you think you could sub soy sauce or teriyaki sauce for the Braggs amino? I already have these on hand if it taste about the same.

    1. Braggs Aminos is a healthier version of soy sauce. So, if you already have soy sauce and want to use that instead it is up to you. 🙂
