What are Chaffles?

When I first started eating keto, chaffles hadn’t yet hit the internet. But after about a year, chaffles were everywhere. I saw so many different types of chaffle recipes (sweet, savory, etc…) that I knew I had to try them. And boy, was I hooked.

I’m a big breakfast girl! I love biscuits, waffles, muffins, pancakes……..all the things! One morning, I was craving blueberry waffles (they are my fave!) and decided to make a low-carb version using chaffles

Basically, you start with egg and cheese in a small bowl to make cheese waffles. Since chaffles went viral online, the original recipe has expanded beyond shredded cheese and eggs to include ingredients such as coconut flour (or almond flour), baking powder, sweetener of choice, and a host of other ingredients such as blueberries, chocolate, chocolate chips, etc.

Ingredients you’ll need for Blueberry

  • Egg: Helps hold the chaffle batter together when cooked
  • Mozzarella cheese: Gives that good savory flavor and moisture for a soft, cheesy interior
  • Blueberries: Adds bits of sweet berry flavor throughout the chaffle
  • Cream cheese: Gives a richness to the baked chaffle
  • Coconut flour: Absorbs moisture and makes sure the chaffle gets nice and crispy
  • Baking powder: Makes the chaffles light and fluffy when cooked
  • Vanilla extract: Provides sweetness and gives overall flavor
  • Liquid sweetener: The sweetness that balances out the savory cheese

Steps For Making Easy Blueberry Chaffle Recipe

Step 1: Preheat Waffle Iron

  • It takes just a few minutes to heat. You don’t want to miss this step, as it helps crisp the outside of the waffles. It only takes 2-3 minutes. If you have a Dash Mini Maker, the light on the top will go off when it is preheated.
  • Grease plates generously with cooking spray

Step 2: Mix Wet Ingredients

  • Crack the egg into a small mixing bowl, add shredded cheese and the rest of the ingredients.
  • Whisk ingredients until smooth

Step 3: Pour Chaffle Batter

  • Cover the dash mini waffle maker with ½ of the batter and sprinkle a couple of blueberries on top.
  • Cook for approximately 3-4 minutes until your chaffle is golden brown.
  • Remove the chaffle carefully.

Step 4: Repeat Following Instructions

  • Repeat the step above for the remaining batter
  • Serve with sugar-free maple syrup, whipped cream, or keto ice cream

Cooking Tips for Best Blueberry Chaffles

  • Use room-temperature ingredients: I find it best to take the eggs, cream cheese, and mozzarella out of the fridge about 30 minutes before starting so they mix better into the batter. If you don’t have time, they will still be delish! I rarely remember this.
  • Mix batter very well: To prevent uneven texture, vigorously whisk ingredients until they are combined.
  • Use cooking spray liberally: Give the hot plates a heavy coating of your favorite cooking spray before each batch, or the chaffles may stick. You can always brush on more oil in between batches.
  • Don’t overfill the waffle iron: You want to put just enough batter to cover the bottom plate with a thin, even layer. I’ve done this more times than I can count, and it makes a big mess of batter dripping out everywhere. I don’t recommend it. lol
  • Resist peeking while cooking: It’s so tempting, but don’t lift the lid. It not only allows the heat to escape, but if you look too early, the chaffle will totally separate with half stuck to either the top or bottom plate.
  • Allow excess batter to drip off: Before removing, carefully tilt the cooked chaffle to let the uncooked batter run off for cleaner results. I always grab a paper towel to catch it before it makes a mess on my waffle maker or counter.

Do Chaffles Taste Like Eggs?

It is hard to make a blanket statement when there are so many differences in opinions and variations of the traditional chaffle recipe. But, if you are particularly sensitive to the taste of eggs, the sweetness of this chaffle may offset the taste.

While I love using fresh blueberries when they’re in season, don’t be afraid to use frozen blueberries if that’s what you have on hand. Just make sure to thaw them first and pat them dry with a paper towel to remove any excess moisture. This will help prevent your chaffles from getting too soggy.

What Sweetener Did You Use in this Blueberry Chaffle Recipe?

The longer I have eaten keto, the less sweetener it takes to satisfy me. For this recipe, I used two squirts of Pyure Liquid Sweetener. When you add either sugar-free maple syrup, whipped cream, or keto-friendly ice cream to eat with blueberry chaffles, you don’t need as much sweetener.

If you don’t have a liquid sweetener, you can substitute 3/4 tsp of any other sweetener, such as Lakanto Monkfruit or Swerve.

Can I Use a Regular Waffle Maker?

Sure! You will likely need to adjust the amount of batter you use and the cooking time. Chaffles made on the Dash Mini Maker are usually golden brown in four minutes, but I have read that regular waffle makers can take longer.

How to Serve?

There are several different ways to serve them. I first tested this recipe as a traditional blueberry keto waffle with sugar-free syrup, sugar-free whipped topping, and a side of sausage. BUT my personal favorite is with a scoop of sugar-free, low-carb vanilla ice cream.

Storage and Reheating Instructions

  • Storing: You should let chaffles cool completely after cooking, about 10 minutes. Place chaffles in a sealable container or zip-top bag and store them in the fridge for 3-5 days. To freeze, wrap airtight and keep in freezer for 2-3 months.
  • Reheating: Preheat oven to 300°F. Place chaffles on a small baking sheet and warm for 8-10 minutes. Heat frozen or refrigerated chaffles in a toaster oven for 2-3 minutes until hot and crispy.

Recipe Variations and Substitutions:

  • Lemon Blueberry Chaffles: Another fun variation is to add a little lemon zest to your batter. I’ve found that just a teaspoon of lemon zest can really brighten up the flavors and add a nice tang to the chaffles.
  • Cream Cheese Glaze:  Simply whip together 2 TB of room-temperature cream cheese, powdered erythritol or monk fruit sweetener to taste, and a splash of heavy cream until smooth.
  • Mixed Berry Chaffles: For those days when you’re craving something a little different, mix things up by using a combination of berries. I love doing a mix of blueberries, raspberries, and blackberries.
  • Skillet Method:  You can easily make chaffles in a greased skillet over medium heat! Just pour your batter into the skillet and cook until golden brown on both sides. It might not have those classic waffle ridges, but it’ll still taste amazing.

    Great recipe. I tried it this morning with some uncured bacon with sugar free maple syrup from Lakanto. I added 1/2 tablespoon of coconut flour
