This recipe base is similar to Keto Crack Chicken; however, I reduced the cream cheese and added spices and cheddar cheese for a different flavor. This low-carb crockpot cheesy chicken is perfect for busy weeknights when you need a recipe that cooks while you’re at work or busy with the kids! Everyone in your family will enjoy this recipe – even those who aren’t on a low carb or keto diet plan! This slow cooker chicken cheese recipe is certain to be a hit! If you don’t want to make this recipe in the slow cooker, here is the instant pot recipe you can use instead.

Is This Slow Cooker Chicken Casserole with Bacon Recipe Keto?

Yes! This recipe is 100% keto. With only 2 total carbs and 1 gram of fiber, this recipe has 1 net carb making it the perfect meal on a keto/low carb diet.

Ingredients:

  • Boneless skinless chicken breasts – I prefer skinless chicken breasts; you could use boneless chicken thighs instead.
  • Butter – Butter always adds incredible flavor and needed fat for this recipe.
  • Poultry seasoning, Rosemary, Thyme, and Garlic – Spices make everything better and add great flavor. If you do not have fresh garlic, you can also use a tsp of garlic powder.
  • Chicken broth – Chicken broth adds more flavor than water when slow-cooking chicken.
  • Cooked bacon – Crispy bacon makes everything better.
  • Heavy whipping cream & Cream Cheese – Adds flavor and fat and helps thicken the sauce.
  • Cheese – Cheese is an incredible addition to this dish for an ooey-gooey cheesy chicken dish.

Step 1: Season the chicken with salt and pepper, then add the chicken, butter, seasonings, and chicken broth to the slow cooker.

Step 2: Next, crumble cooked bacon over the chicken mixture. To cook the bacon, place it in a large skillet on medium-high heat until crispy or on a sheet pan in the oven at 375 until cooked.

Step 3: Cook the chicken casserole mixture on high for 3 1/2 hours or low for 6.

Step 4: Add heavy whipping cream and a dollop of cream cheese. Stir to combine all the ingredients. Using 2 forks, shred the chicken in the slow cooker.

Step 5: Add 1 3/4 cups of cheddar cheese (or more if you’d like), then crumble 3 more pieces of cooked bacon on top. Place the top back on the slow cooker and allow the cheese to melt. Garnish with parsley or chives and serve. Enjoy!

To store, allow the cheesy chicken casserole to come to room temperature, and place it in an airtight container in the fridge for up to 3 days.

  • Using 2 forks, shred chicken in slow cooker.

  1. I would like to know what Xanthan Gum is exactly and what does it do for the recipe? I’m new with this life change so I just didn’t understand.

    1. Xanthan Gum is a keto approved thickening agent. If you don’t have it, the food will taste the same but the sauce will be thin.

    2. Maybe cut down on the stock to just 1/4 cup and maybe add more cream cheese and you won’t have to use a thickening agent.

  2. I am trying this tonight, and it’s the first time I’ve used a slow cooker. I went a little ingrediate crazy and added everything up to cream cheese and heavy cream to start. Will this ruin the meal? Not sure what 4 hours of cooked heavy cream will result! Help!

  3. I just made this and it’s realky good. However, I dunno how you got 8 servings unless you’re feeding a baby. I got 4 servings and it’s still kinda small portions. That’d be really sad if this little bit is 604 calories lol

  5. I’m going to add some chopped jarred jalapeños before I broil……..maybe a bit of
    chopped tomato too…will serve my husband’s over rice.

    1. I state in the recipe the chicken that I use. If you like thighs, I’m sure you could use them.

  6. My biggest issue with keto is that my husband and son are lactose intolerant. There are SO many yummy recipes but a lot of them call for quite a bit of dairy. Do you know of any dairy substitutes for keto that I could try with this recipe? Thanks!
