A hamburger bun or slice of bread might be what many of us dream about those first few weeks of eating a keto diet. I think we all start looking for some kind of substitute to satisfy our bread cravings. I know I tried a host of different recipes, which left me feeling disappointed mostly.

Then, I started hearing about 90-Second Keto Bread. If you’ve ever tasted it straight out of the microwave, you may understand why I think it is a lifeless, dull, flimsy eggy bread. I am just not that desperate for bread if I have to eat it like that.

I love tweaking recipes and thought there has to be a solution that would bring this keto bread to life. The key to a delicious 90-second keto bread recipe is browning it in a skillet before serving with a little butter to make it crisp.

WHAT IS 90-SECOND KETO BREAD?

It is simply a single portion of a keto-friendly bread cooked in the microwave for 90 seconds.

HOW MANY CARBS IN 90-SECOND BREAD?

This particular recipe has 1g net carbs per serving. This will vary depending on the serving size.

INGREDIENTS FOR 90-SECOND KETO BREAD:

  • Egg (you can also use an egg white if you are particularly sensitive to foods tasting eggy)
  • coconut flour
  • butter
  • sour cream
  • baking powder
  • cheese
  • pinch of salt

After you mix up all the ingredients, it will look a little lumpy like this in the picture above. Now, you simply microwave for 90 seconds.

This is sad, lifeless 90-Second Keto Bread straight out of the microwave. You don’t want to eat it like this as it will taste spongey and eggy. The next steps are the most important in the process of making the best keto bread recipe.

How to reheat and cut your low carb bread

I tend to make my 90-Second Keto bread rather thin in a ramekin instead of a mug. Otherwise, it is just too thick for me. You’ll need a serrated bread knife to cut the bread in half horizontally.

Melt butter in a skillet and sear bread on both sides until it’s crispy. I use an 8″ skillet.

Last night I made Keto Pot Roast and remembered a recipe at lunch today where you serve pot roast on bread with melted cheese. As I was making the bread, I decided to change up some of the ingredients in hopes of making it even better. I can say that it was a total success. You do still need to crisp it up in a skillet or toaster oven for sure, but the flavor is so much better with the changes I made.

The result was amazing–and delicious. Like several others before me, I wish I could post the picture of my delicious breakfast! Note to others–don’t be afraid to be generous with the butter when you fry it. I have the feeling this is going to enable to me not feel at all deprived of my favorite thing–bread–on this journey!   3. You have made keto life more fulfilling! This was SO yum & if anyone didn’t know better, they would have thought it was regular bread. I also did your keto French toast – absolutely close to the real thing if not better. I did sub 3 tbs almond flour for the 1 tbs coconut flour in all of them. That was the only change. Thank you!

  4. Microwave bit the dust so I had to bake it. I used oven-safe ramekins @ 350 degrees. At 10 minutes was still not quite done. Kept a close eye. Took them out at 13 minutes. Perfect for my oven. Once again you’ve hit it out of the park for a coconut flour recipe. Kudos!!! Next time may add a touch of garlic, a little dill, so many ideas. Thank you so very much!!!

  6. I made a turkey and pepperjack grilled cheese with this today but instead of frying in a skillet with butter, I added mayo to the outside of each slice and fried it. It was absolutely delicious!! Thanks for posting this recipe. I will definitely be making again.

  7. I made it today ! I used the 3 tablespoons of almond flour and I put cut up jalapenos and I put pepper jack cheese( I like spice )
    I used plain yogurt instead of sour cream and a tiny bit of almond Milk.
    I used coconut oil and GHEE ( clarified butter) instead of regular butterand a pinch of salt.
    It was very fluffy. I cut it in half and toasted in my toaster oven afterwards to crisp it up.
    When I took it out of toaster oven I put some pepper jack cheese and bacon in the middle as a sandwich.
    It was yummy 🙂 I had it with my soup today !! 🙂

  8. Kasey, I have trouble cutting the bread in half. Do you think it would be easier if I put it in the fridge for a while?

    1. Do you have a serrated bread knife? I’ve never had any trouble so I haven’t tried cooling it first.

  9. Perfect. I had no sour cream, so used 1 tbsp of cream cheese instead. I also used mozzarella instead of cheddar because it has a mild flavor and was afraid the cheddar would make the bread taste too cheesy (I had shredded mozzarella, so I chopped it very finely on a cutting board). I actually forgot to add in the baking powder! Despite that, the bread came out perfect. I toasted it first and then placed it in a pan and browned it on each side for a few seconds without butter. Definitely making this again! It was great. Didn’t taste eggy at all and the consistency was pretty good. I’d love to find a way to make it hamburger friendly. Thanks for sharing! ?

  10. Can you use mozzarella instead of cheddar and cream cheese instead of sour cream. Don’t care for sour cream taste

    1. I haven’t tested that exact combination so I can’t say for sure, but I think it would be fine. I hate sour cream, but you really can’t taste it.
