Then, I started hearing about 90-Second Keto Bread. If you’ve ever tasted 90 Second Bread straight out of the microwave, you may understand why I think it is a lifeless, dull, flimsy eggy bread. I am just not that desperate for bread if I have to eat it like that. I tried several recipes I found on Pinterest, but they all were dry and eggy.
I love tweaking recipes and thought there has to be a solution that would bring 90-second keto bread to life. I added and subtracted ingredients until I came up with the perfect keto bread substitute. The key to a delicious 90-second keto bread recipe is browning it in a skillet before serving with a little butter to make it crisp.
What is 90-Second Keto Bread?
It is simply a single portion of a keto-friendly bread cooked in the microwave for 90 seconds.

Ingredients for 90-Second Keto Bread
- Egg (you can also use an egg white if you are particularly sensitive to foods tasting eggy)
- coconut flour
- sour cream
- baking powder
- pinch of salt
After you mix up all the ingredients, it will look a little lumpy like this in the picture above. Now, you simply microwave for 90 seconds.
This is sad, lifeless 90-Second Keto Bread straight out of the microwave. You don’t want to eat it like this as it will taste spongey and eggy. The next steps are the most important in the process of making the best keto bread recipe.
I tend to make my 90-Second Keto bread rather thin in a ramekin instead of a mug. Otherwise, it is just too thick for me. You’ll need a serrated bread knife to cut the bread in half horizontally.
Heat a skillet with a tablespoon of butter and cook bread on both sides until it’s crispy. I use an 8″ skillet.
Pro Tip: Make sure to get allow the skillet to get good and hot before adding the bread, but keep a careful eye on it as you don’t want the butter to burn.

You do still need to crisp it up in a skillet or toaster oven for sure, but the flavor is so much better with the changes I made.

How to Make 90 Second Keto Bread
90 Second Keto Bread that Actually Tastes GOOD
- 1 tablespoon coconut flour
- 1 1/4 tablespoon butter, melted
- 1 egg
- 1 teaspoon sour cream
- 1/4 teaspoon baking powder
- 1 tablespoon cheddar cheese, grated
- Melt butter in a ceramic or glass bowl. (mine was about 6 inches)
- Add the rest of the ingredients and whisk together until combined.
- Cook in the microwave for 90 seconds.
- Remove from the microwave and allow to cool for a minute or two.
- Cut bread in half like a bun (each side will be thin).
- Heat 1 tablespoon of butter in a skillet and cook 90-Second Bread on each side until crisp.
