Step 2: Shred your cabbage finely and add it to your ground meat along with ginger, beef broth, Bragg’s aminos, butter, and ginger. Simmer for 15 minutes uncovered until cabbage is wilted and tender. Honestly, the vegetables are my favorite part of this recipe. I could eat cabbage all day long.

Tip: To save time, you can purchase a pre-made bag of shredded cabbage in a coleslaw mix from the store. Some contain grated carrots, but they only add minimal carbs. If I am in a pinch and plain cabbage is unavailable, I’ll use the bag of coleslaw with carrots. A bag of broccoli slaw works well and tastes fantastic in this recipe. If you use fresh cabbage, you’ll find instructions on how to chop it in this helpful video.

Note* Instead of soy sauce, I used Bragg’s aminos, a healthier keto alternative that adds lots of flavor to this dish. If you are avoiding soy, coconut aminos is a great alternative.

To make this using a pressure cooker:

Step 1: Brown your meat, onions, and garlic using the “sauté” option. This step is important as it helps develop tons of flavor!

Step 2: Add the rest of the ingredients on top before closing the lid—Cook under high pressure for 3 minutes.

Step 3: When the 3-minute cycle is complete, do a QR (quick release). Once the pin drops, remove the lid and stir. If there is still liquid in the bottom of the pot, sauté for another 2-3 minutes to allow the excess liquid to reduce.

Step 4: Serve with freshly chopped scallions or chopped green onions and a drizzle of sesame oil over the top!

Can I Make This Ahead Of Time and Freeze It?

Yes, this recipe freezes very well! It is a fantastic recipe for meal prep.

I suggest doubling or tripling the recipe and freezing the leftovers in an airtight container or plastic freezer bag. It should last between 2-3 months when properly frozen. To reheat, allow the mixture to defrost overnight in the fridge, and then reheat the egg roll filling in a bowl in a skillet or the microwave until just heated through for a simple, easy keto recipe.

How to Make on Stovetop:

  • Heat a large skillet over medium-high heat. Add the ground beef and diced onion to the skillet. Cook, breaking up the beef with a spatula, until the beef is browned and the onion is softened.
  • Add the minced garlic to the skillet and cook for 30 seconds more.
  • Drain any excess grease from the skillet.
  • Add the shredded cabbage, beef broth, Bragg's Aminos, butter, and ground ginger to the skillet. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to medium and simmer for 15-20 minutes, or until the cabbage is tender and the liquid has reduced.
  • Season with salt and pepper to taste.
  • Serve immediately, drizzled with toasted sesame oil and garnished with chopped scallions (optional).

How to Make in the Instant Pot:

  • Set your pressure cooker to the "sauté" function. Add a tablespoon of oil to the pot. Add the ground beef (or ground pork), diced onion, and minced garlic to the pot. Cook, breaking up the meat with a spatula, until the beef is browned and the onion is softened. Drain any excess grease from the pot.
  • Add the shredded cabbage, beef broth, Bragg's Aminos, butter, and ground ginger to the pot. Stir to combine.
  • Close the lid and set the pressure cooker to the "high pressure" setting. Cook for 3 minutes.
  • Once the 3-minute cooking cycle is complete, release the pressure quickly by moving the steam release valve to the "venting" position.
  • Once the pressure has been released, carefully remove the lid from the pot. Stir the mixture to combine.
  • If there is still a lot of liquid in the bottom of the pot, set the pressure cooker to the "sauté" function and cook for another 2-3 minutes or until the liquid has reduced to your liking.
  • Serve the keto egg roll in a bowl immediately, garnished with chopped scallions and a drizzle of sesame oil (optional).

  1. Any good suggestions for an Airfryer. Bought it 3 months ago. Thats all I have. I love the egg roll idea but it seems too much sodium. Trying to cut out fried foods as well. Am single so it won’t be too hard.

    We make this all the time. Sometimes we just stirfry everything all together including the cauli rice. Yummy.

    This was fantastic! I used a coleslaw mix and served it over cauliflower rice. I’m glad I doubled the recipe so I’d have leftovers. This was even better the next day. The only change I’d make is to use a bit less of the aminos as it was a bit salty.
