Keto Pecan Pie Muffins will be the perfect addition to your holiday baking repertoire. These deliciously low-carb muffins are so easy to make. They are the perfect snack, quick breakfast, or yummy dessert you can enjoy during the holidays or any time of year.

As a Southern girl, pecan and pumpkin pies were always my favorite holiday desserts. Anything remotely similar to pecan pie still catches my interest. While scrolling through Pinterest muffin recipes, I found one for regular pecan pie muffins that looked delish. Of course, it was full of sugary things that I no longer eat. I thought I might be able to tweak the recipe and change out the brown sugar for a sugar-free brown sugar and sub out the flour for coconut flour along with a few other changes.

Oh my, this keto muffins recipe is tasty enough even for those non-keto eaters in your family.

Are Pecans Keto?

Pecans are low in carbs and high in fat, making them a good choice for keto diets. One-fourth cup of chopped pecans have only 3g carbs and  2g of fiber, making it only 1g net carb.

What Keto-Friendly Sweetener is in this Recipe?

So many pecan recipes use corn syrup for sweetener. Not this keto pecan pie muffin recipe! I used two different keto-friendly sweeteners.

Lakanto Monkfruit Golden is a brown sugar substitute that contains zero net carbs, zero calories, and is zero-glycemic. I’m sure you think of pancakes when you see Lakanto Sugar-Free Maple Flavored Syrup, but the little bit I added gave a nice hint of maple flavor to these delicious low carb muffins.

Tip: If you prefer, Swerve Brown can be subbed for Lakanto Monkfruit Golden.

In a small bowl, add the softened butter, eggs, and Lakanto Maple Syrup, using a mixer on medium speed to combine. In a separate bowl, stir together the Lakanto Monkfruit Golden, coconut flour, and chopped pecans. This recipe doesn’t call for baking powder or baking soda as many muffin recipes do.

Tip: A super-easy way to chop pecans is by putting them in a zip-lock bag and using a rolling pin to crush them.

When you combine the butter mixture to the dry ingredients, you’ll notice that the batter is very thick due to the high absorbency of coconut flour. Don’t let this worry you because I guarantee your keto pecan pie muffins will still turn out moist and delicious.

You can let the muffins cool completely before serving. Because of the tantalizing smell filling your kitchen while the muffins are baking, you may pop one in your mouth while it’s still warm and right out of the oven.

What Size Muffin Pan Do I Use in this Recipe?

This recipe turned out best in a mini muffin tin.  You could also use a pie pan or baking pan to make Keto Pecan Pie Bars, but the high content of crushed pecans will make them a bit crumbly. I tested this recipe in both the mini muffin pan and in a baking pan, and the mini muffins were perfect.

Best Muffin Liners for Keto Baking?

Keto flours tend to be sticky. I have found that parchment paper muffin liners work best. Nothing sticks at all, and they come right out of your muffin pan without any kind of mess. I hate scrubbing mini muffin pans and have been extremely pleased with the parchment liners.

The turkey or ham may be the main attraction on your Thanksgiving or Christmas table, but everyone knows it’s all about the sweet stuff. No one should have to miss out on dessert! This pecan pie muffin keto recipe will be loved by young and old alike!

Variations to Keto Pecan Pie Keto Muffins Recipe:

  • Substitute almond flour for coconut flour. The conversion is 1/4 cup coconut flour equals 1 cup almond flour.
  • Add sugar-free chocolate chips.
  • Use Swerve Brown instead of Lakanto Monkfruit Golden.
  • You can make it in a baking pan to make Keto Pecan Pie Bars, but due to the large number of pecans in the recipe, it can be a bit crumbly.

How to Store Low Carb Pecan Pie Muffins?

These Pecan Pie Muffins will store for four to five days in the fridge, or you can freeze them in an air-tight container for three to four months.

  • Preheat oven to 350.
  • In a small bowl, combine the softened butter, eggs, and Lakanto Maple Syrup. Combine with a mixer on medium speed.
  • In another bowl, add Lakanto Monkfruit Golden, coconut flour, and chopped pecans. Stir to combine.
  • Add the butter mixture to the dry ingredients and mix on medium speed until combined.
  • Line a mini muffin pan with parchment paper liners. I use these.
  • Scoop batter into muffin tins. (I made 30 muffins)
  • Bake for 13-15 minutes.
  • Enjoy!

Notes

The sugar alcohols from the Lakanto Monkfruit Golden and Lakanto Monkfruit Sugar-Free syrup are not included in the nutritional information since most subtract to calculate net carbs.

    You are the absolute bomb-biggety!!😆😆😄😄 I can’t wait to make these wonderful treats.. did you come up with a recipe for the shirttail mushroom noodles?

    1. Due to the number of pecans used they would be very crumbly. I have not tested them in a regular muffin pan so I’m not sure. You would just have to watch them.

  2. These are delicious. I have made the regular ones for years and honestly, you can tell very little difference in these. I have the pampered chef mini muffin pan and I just sprayed it with cooking spray and they came right out. I did bake a couple minutes longer and they were crispier. I’ve made them twice and we love them. Thank you so much. I love so many of your recipes.

    These are amazing! I only used 1 cup of pecans because it’s all I had in the pantry. I lined with paper cups and had a lot of butter soak through. I should’ve used my silicon mini muffin pan. I’ll try that next time. This is my go to recipe- deliciousness!

    1. I don’t use Splenda in baking as it tends to make it taste bitter. Yes, you can use regular sugar free maple syrup.
