One pan healthy meals are my favorite. Not only are they a snap to clean up, but preparation time is minimal as well. This particular recipe is my family’s favorite one pan meal, Ground Mustard & Parmesan Pork Chops. I found a very similar recipe online, but made modifications to better suit my family. For so many the biggest question about meal prepping is, “How do I get started?” The entire process, if looked at as a whole, might seem overwhelming in the beginning. However, I have found that if you break it down into steps and choose one step at a time to implement, then it actually saves time. Plus, it’s so much easier to eat healthy when you have a plan. I don’t know about you, but if I wait until 5pm in the afternoon when the baby is going crazy and my big kids are ready to run wild, cooking can easily be put on the back burner while I look for the quickest escape, such as having my hubby pick up a pizza on the way home. I made Apricot Chicken with broccoli and asparagus and it was amazing!! This recipe was inspired by Olive Garden’s Venetian Apricot Chicken, however I have made several adjustments to the recipe to make it easier to prepare.
My family absolutely loves Mexican food, but often times Mexican food can be pretty unhealthy so I’m always looking for a healthy alternative. As I was meal planning this week I remembered this recipe video that I saw on Facebook for Mexican Quinoa however, my husband does not enjoy vegetarian meals so I knew he’d be less than happy if I made it for dinner. I whipped together this super easy pasta salad this morning and thought I’d share my recipe. My daughter even said that it was so delicious it was definitely Pinterest worthy. This Pasta Salad recipe is chock full of fresh veggies, in fact, there are more vegetables than pasta. You could add in whatever vegetables you have on hand. I basically cleaned out our fridge, chopped all the vegetables, and tossed them in. Viola we have a healthy Pasta Salad. It is best chilled overnight but I doubt we’ll be able to wait that long.
