Earlier this week I posted a picture of cheese crackers I was making on Facebook in my Easy Keto/Low Carb Recipe Page. I had lots of questions so I decided that next time I made them, I would document the back time and temperature. I also thought that although the ones I had made were good, they could be even better. So, I started experimenting. I’ve made them several times at different temperatures and baking times before finally perfecting the recipe. These have to be the most amazing and crispy ones I’ve made, and they are full of flavor thanks to extra seasoning. These Keto Cheese Crackers are so simple to make. One of the very first meals I cooked when I started following a ketogenic/low carb lifestyle was Broccoli & Cheese Soup. I had avoided it for years due to the high-fat content. Now that I was eating high-fat foods with Keto, I couldn’t wait to start enjoying homemade Broccoli & Cheese Soup again. As a busy homeschooling momma, I try to keep things simple. One way I do this, especially when the weather is cold, is by making a big pot of soup to eat for lunch all week. This Keto Broccoli & Cheese Soup is on my menu at least twice a month because we all love it. Last night I decided to tweak my Broccoli & Cheese Soup recipe so I could make it in my Instant Pot. I just love my Instant Pot. It’s kind of like a Crock-Pot on steroids as it cooks so much faster. It also infuses the food with flavor making it taste as if it has been simmered on the stove for hours. No wonder the Instant Pot has become so popular! I am starting to enjoy my Instant Pot especially for recipes like chili that I typically simmer on the stove for several hours. The Instant Pot gives me the option of a yummy home cooked meal in a fraction of the time it would usually take. My kids requested chili tonight, so I thought I’d try my Keto/Low Carb Chili recipe that I usually cook on the stove in the Instant Pot. I made added a little chopped green pepper to make it a little chunkier and reduced the liquid for the Instant Pot. Chili might be one of my family’s favorite dinners. It is something I cook often, and we all enjoy. I’m the odd one out in our family as I don’t like my chili with beans anyway. Of course, to make it Keto/Low Carb I leave the beans out for my hubby and I then in a separate pot on the stove I warm up beans for my kids that they can add to theirs. It is one way I can cook one meal that we all enjoy as my kids aren’t doing keto with us. They certainly eat less carbs than they used to, but they don’t follow a strict keto lifestyle. We were all really pleased with how yummy it turned out!

We usually travel every Thanksgiving, so I don’t typically have any leftovers. However, I LOVE my mama’s baked ham so much I asked if she would send some home with us. Like most, my kids and hubby aren’t typically excited about eating leftovers.
I have found that if I prepare a dish that is totally different than the original, sometimes they don’t even realize we are having leftovers. So, instead of traditional dishes with leftover ham, I made ham and egg breakfast cups for breakfast. An easy meal, packed with protein!
