This Keto Chicken with Mushroom Sauce is one of my absolute go-to dinners. It’s creamy, flavorful, and comes together in one skillet for easy cleanup. If you’ve followed me for any amount of time, you know I’m all about easy, family-friendly keto meals that taste amazing without spending hours in the kitchen. As a busy mom of four who’s been cooking low-carb for years, I’ve created and tested hundreds of recipes.

Before I started eating low-carb, one of my favorite comfort foods was chicken simmered in cream of mushroom soup with rice. When we switched to a cleaner, keto-friendly lifestyle, I said goodbye to processed canned soups. But I really missed that creamy mushroom gravy flavor. So, I decided to create my own version from scratch.
Here’s the best part: I don’t even like mushrooms. They gross me out! lol! I know it’s crazy for someone creating a mushroom recipe! The flavor of this homemade gravy is so good that even mushroom-haters like me will love it. My oldest daughter actually chops them up for me because I can’t stand the texture. So trust me when I say: if I love this, you will too.
This recipe takes inspiration from my Keto Green Bean Casserole. Specifically, that rich, homemade creamy mushroom sauce, but simplifies it into a one-pan chicken dinner. With just 10 minutes of prep and 25 minutes of cook time, it’s weeknight-friendly and full of comfort-food flavor.

Ingredients
- 1 ½ lbs boneless, skinless chicken breasts (or thighs)
- ½ cup diced onion
- 2 garlic cloves, minced
- 8 oz mushrooms, chopped
- 2 tbsp butter
- 1 cup chicken broth
- ⅔ cup heavy whipping cream
- ¼ cup grated Parmesan cheese
- ½ tsp oregano
- ¼ tsp thyme
- ¼ tsp parsley
- ½ tsp xanthan gum
How to Make Keto Chicken with Mushroom Sauce

- Sauté the vegetables. In 1 tablespoon of butter, cook mushrooms, garlic, and onion over medium heat for about 6–7 minutes, until tender. Remove the item from the skillet and set it aside.

- Brown the chicken. Add the remaining 1 tablespoon of butter, then sear the chicken breasts on both sides.
- Combine & simmer. Return the vegetables to the pan. Add chicken broth, cream, Parmesan, and seasonings. Cover and simmer on medium-low for 20 minutes.

- Thicken the sauce. Remove the lid, stir in the xanthan gum, and continue simmering uncovered for about 10 minutes, until the sauce has thickened and the chicken is cooked through. Salt and pepper to taste.
- Serve with roasted veggies, zucchini noodles, or a big leafy salad for a complete meal.
Tips for the Best Creamy Mushroom Chicken
- Use a cast-iron skillet for the best flavor and even heat.
- Don’t skip the Parmesan. It adds richness and layers of flavor to the sauce.
- For extra creaminess, add a spoonful of cream cheese before simmering.
- Hate mushrooms? Finely chop them so you get the flavor without the texture.

How to Store Keto Chicken with Mushroom Sauce
Leftovers store beautifully, making this the perfect meal prep recipe. Let the dish cool completely before storing it in an airtight container and keeping it in the fridge for up to 3–4 days.
To reheat, warm gently on the stovetop over low heat or in the microwave in 30-second bursts. Be sure to stir the sauce occasionally to keep it smooth and creamy. If the sauce thickens too much after chilling, stir in a splash of chicken broth or heavy cream to loosen it back up.
Keto-Friendly Swaps for Classic Comfort Sides
If you’re used to serving chicken and mushroom sauce with mashed potatoes, pasta, or crusty bread, there are plenty of low-carb substitutes that still soak up all that creamy gravy. Try creamy cauliflower mash or buttery mashed turnips as alternatives to potatoes. Keto Chicken with Mushroom Sauce (Creamy One-Pan Chicken)
Ingredients
- 1 1/2 lb boneless skinless chicken breasts (or thighs)
- 1/2 cup diced onion

- 8 oz mushrooms chopped
- 2 tbsp butter
- 1 cup chicken broth
- 2/3 cup heavy whipping cream
- 1/4 cup parmesan cheese, grated
- 1/2 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp parsley
- 1/2 tsp xanthan gum
Instructions
- In a cast-iron skillet, sauté onion, garlic, and mushrooms in 1 tbsp butter over medium heat for 6–7 minutes, until tender. Remove and set aside.
- Add remaining 1 tbsp butter to the skillet and sear chicken breasts on both sides until light golden.
- Return the sautéed veggies to the skillet.
- Stir in chicken broth, heavy whipping cream, Parmesan, and seasonings.
- Cover and simmer on medium-low heat for 20 minutes.
- Remove lid, sprinkle xanthan gum over the sauce, and simmer uncovered for 8–10 minutes, or until the sauce thickens and the chicken is cooked through.

- Want a smoother sauce? Chop mushrooms finely (great for picky eaters!).
- Sauce too thick after chilling? Add a splash of broth or cream when reheating.

Are the macros for one piece of chicken breast?
I divided the dish into equal sized servings but the macros will vary as each chicken breasts weighs differently. If you are strict keto you’ll want to weigh your ingredients and calculate your own macros based on the exact ingredients you use.

Hi, I followed your recipe and for some reason I ended up with no sauce left over after I simmstsdz Any tips as to why? I simmered for twenty minutes with the lid on but when I removed there was no trace of the cream except just a watery residue

You can omit just boil the sauce down with the lid off a little longer.
If you have picky eaters just purée the veggies before adding them back in. They’ll never know what’s in it 😁. Delicious!

Freakin delicious!!! I just ate the leftovers for lunch & it was just as good as last night! The only thing I did differently was to salt & pepper the mushrooms,garlic, onion mixture as well as the chicken bf cooking. I also added more mushrooms bc they are one of my guilty pleasures!
