This Slow Cooker Low Carb Keto Pot Roast Recipe is fork-tender and incredibly flavorful. It’s the ultimate comfort meal, much like a traditional Mississippi pot roast.
Crock-Pot Keto Pot Roast Recipe (Mississippi Style)
My family loves pot roast. It’s such a yummy filling comfort food. Since I stay home with our four kids, slow cooker recipes that I can start in the morning and forget about the rest of the day make dinner easy. Our favorite slow cooker recipe has always been a delicious and easy pot roast. When we started eating keto, I decided to adapt the traditional Mississippi Pot Roast to make it more keto-friendly.

Frequently Asked Questions About Mississippi Style Keto Pot Roast
WHY IS IT CALLED MISSISSIPPI STYLE POT ROAST?
According to Google, the original recipe came out of Ripley, Mississippi, in the 1990s by Robin Chapman, who was looking to make a recipe her aunt made milder. The recipe was later contributed to a church cookbook by a friend, and the rest is history. If you prefer chicken over beef, give my Crock Pot Mississippi Chicken a try.
HOW IS THE MISSISSIPPI POST ROAST DIFFERENT THAN REGULAR POT ROAST?
This Keto Mississippi Pot Roast Recipe is naturally low carb as there are no potatoes and carrots. The stars of the show that set it apart from the rest are a stick of butter, ranch dressing mix, and pepperoncini peppers. The traditional recipe also calls for a packet of gravy mix, but I omitted that for a keto version. If you are strict keto and prefer not to use a packet of ranch dressing mix, there are lots of recipes on Pinterest for homemade ranch dressing mix.
IS KETO MISSISSIPPI POT ROAST SPICY?
No! I am a total wimp when it comes to spicy foods. This recipe is mild. My toddlers even love it.
IS IT NECESSARY TO SEAR THE POT ROAST BEFORE SLOW COOKING?
I used to sear the roast first in a cast iron skillet but skipped the step once due to time constraints, and I could not tell the difference at all. The roast was still every bit as flavorful and tender, so now I don’t bother with searing it anymore. It saves time, and there is less mess in my kitchen.
HOW LONG TO COOK CROCK-POT ROAST RECIPE?
Although sometimes cooking times can vary depending on the size and shape of the roast, generally, you will cook on high for 4-5 hours or low for 9-10 hours. If you find that the pot roast in the Crock-Pot isn’t fork tender after the allotted cooking time, it needs to cook longer. Go ahead and shred the roast if it is tender enough to shred, then continue to slow cook on high for another hour or so. If it isn’t tender enough to shred, continue slow cooking for at least an hour on high without removing the lid. Removing the lid from the Crock-Pot causes heat to escape, which increases the cooking time.
One-Step Mississippi Style Keto Pot Roast
This Mississippi Pot Roast Keto Recipe is so easy to make, you simply dump all the ingredients in the slow cooker, add a stick of butter on top, turn it on, then forget about it until it’s ready. It reminds me of Sunday lunch at my grandmother’s house when I was a child, which feels like comfort food.
WHAT IS THE BEST CUT OF BEEF FOR A POT ROAST?
I was surprised to find that a tougher cut of beef with lots of marbling makes a better roast when making a recipe for roast in the Crock-Pot. For the most tender meat, choose one of the roasts listed below.
- Chuck Roast (highly marbled with a lot of fat) – also labeled Shoulder Roast, Blade Roast, Chuck Shoulder, Severn Bone Roast
- Bottom Round Roast (leaner than chuck roast) – Roast Rump Roast or London Broil
- Beef Brisket (lots of fat) – comes with a much heftier price tag than either of the others and is usually BBQed or smoked
If you prefer to pressure cook your roast in the Instant Pot, here are Instant Pot Keto Roast cooking instructions.
HOW TO SHRED POT ROAST?
I used two forks to shred the pot roast in the Crock-Pot by placing the forks back to back in the roast adjacent to each other with the tips in the meat. Then, pull the forks in the opposite direction to shred the pot roast. I pull out large pieces of fat as I shred and discard.
HOW TO THICKEN THE GRAVY?
Most who follow a keto or low carb recipe avoid corn starch and regular flours, which are often used to thicken gravy in pot roasts. A keto-friendly alternative is Xanthan Gum. Only use a small amount and let it sit on the food for five to ten minutes to give it time to thicken. I always start with 1/4 to 1/2 tsp to start then add more if needed. If you use too much, the food will have a slimy texture.
HOW TO STORE THIS RECIPE:
This rich and flavorful Low Carb Pot Roast stays good for 3-4 days in the fridge or 5-6 months in the freezer in a freezer-safe container. You can also repurpose it to use in Keto Beef Stew.
TIPS FOR THE VERY BEST KETO POT ROAST:
- Use a Chuck Roast as it will be the most tender and flavorful when slow-cooked.
- Use beef broth instead of water for a nice bold flavor.
- While I always skip searing a pot roast to save time, experts say that searing is best. Personally, from testing it both ways, I can’t tell the difference.
- If the pot roast seems tough, it likely needs to slow cook longer. Close the lid and check again in an hour or so.

Sue

Thanks! I’m so glad that my recipes are helpful. It will vary based on the size of the roast. Blessings!
Herb says
What are the nutritional facts?
Kasey says
That will depend on the cut of meat you are using and how you divide it into servings. Since so much of the butter melts into the juice it is really impossible for me to calculate the macros. You would need to calculate your own on this recipe.
Tyesha says
Hi i see that you fast for breakfast so what time do you eat lunch an do u fast same time every week or you change up an eat breakfast an fast for lunch ??
Kasey says
I fast breakfast mainly because it is just easier with 4 kids. As far as lunch goes, I eat whenever I have a few minutes to grab something. I am not rigid and don’t follow a time schedule to eat. I usually only eat breakfast on Saturday mornings.
Sarah says

I’m making the slow cooker pot roast today. Somewhere I saw it made as a sandwich with cheese as a leftover and of course now I can’t find it. Do you have that recipe? Thank you!!

Sure! I use this bread recipe then add the roast and provolone cheese.

Rebekah says
This was delicious! I made it exactly as the recipe is stated. I may have added a few extra peppers. I especially enjoyed this style of pot roast because it has different flavors than a typical pot roast and a little bit of kick.
I also made the cauliflower mac & cheese and it was amazing!
Thank you!
Kasey says

to leave it out? Sorry, I am a newbie!!!

I’ve only tried it as is. Sorry, not sure how it would turn out without it.
Darlene says
Did the papers make the pot roast spicy?
Kasey says
No. I don’t like spicy foods at all.
Alethea says
How many carbs in a serving?
Kasey says
That will depend on the exact roast you get and the ingredients you use. This is one that it really is impossible to give an accurate macro count.
Angelle says
Could you try this with a deer roast? Would it need to be prepared differently? Great recipe! Prepared it many times with a chuck roast! Family loves it!
Kasey says
You could give it a try. I’ve never cooked any kind of deer meat so I’m not sure.
Laura says

Laura

Paula Brubaker says
Sort of worried me because I looked at the ranch dsg mix (dry) and for the package it was 15 servings (1/4 tsp) per serving. Made 16 servings then and each serving was 1 g of carb – guess that it makes 16 g in the whole package. Also the second ingredient was malt dextrin Hope I win’t Throw me out of ketosis. Wonderful recipe though. Cooking it now. .
Kasey says
Hope you enjoy!!
Dayle Verrengia says
It won’t throw you out of ketosis at all. I made this two weeks ago and I believe it aided in the loss of a few lbs bc of the high fat content in chuck roast. Was difficult to calculate macros but I did my best and it was a success. I left the peppers out. Soooo delish! And I added ground flax seed.
Carla says
How many macros did you figure up with in your recipe?
.Kasey says
The nutritional information is at the bottom of the recipe card.
Donna Daven says
I love this recipe! It is the only way I cook beef roasts now. I add a package of au jus gravy mix and only use a half stick of butter. We love it and use the leftovers for Philly cheesesteak sandwiches.
Mary Trenum says
Glad you love it! Great idea to use for Philly cheesesteak sandwiches. There are so many ways to use left-over roast. It’s a winner!
Lindsay O says
Do you have info for cooking this in an Instapot?
Mary Trenum says
There is a link for the Instapot recipe right above the recipe box.
Deb says
Another winning recipe from Kasey. Delicious
I love that my family enjoys this too as with so many of your recipes.
Mary Trenum says
I’m glad your family enjoys the roast. It’s one of my family’s favorites. Thank you for your kind words, Deb. It means a lot to me.
Deborah says
Ive never heard of dry ranch mix where can i find it
Mary Trenum says
It should be in the aisle with salad dressings. It’s in a packet like taco seasoning. Hidden Valley Ranch is a popular one.
Dina P says
What can I substitute for the peppers. Don’t have any in the house. I have capers, green olives, pickle juice..
.Kasey says
I have only used pepperoncini peppers but I’m sure you could green peppers to get a similar flavor.
Melissa says
INCREDIBLY easy, everybody likes, and makes the house smell heavenly all day 😁
Samantha says
I’d like to add in potatoes and carrots (for the non-keto family and because they cook up so yummy with the pot roast juices). If I’m doing 8 hour slow cooker, when would you recommend stirring in potatoes and carrots so they cook but aren’t too mushy? Can’t wait to try this! Thank you!
Kasey says
It actually takes a long time to slow cook veggies like potatoes and carrots. I think they would be fine to add at the same time as the pot roast.
Debbie says
Where do you find the Ranch mix that doesn’t have maltodextrin in it? Hidden Valley has multodextrin
.Kasey says
There is a link in the post for homemade ranch mix if you’d prefer to do that.
jenny says
this was so good, thank you Kasey!!!
.Kasey says
You’re so welcome, Jenny. Glad you enjoyed it.
