Cheesecake is one of my favorite desserts my mom makes, but I wanted more flavor in mine. My family enjoys theirs with fresh strawberries and other fruits. I still felt like mine needed a little bit more zing, so I made a low carb cheesecake topping.
Can I use different fruits for this keto strawberry cheesecake topping?
Yes, you can use any fruit you would like. If you have raspberries that need to be eaten you could make a keto raspberry sauce. You can also combine strawberries with other fruits. For example, you could make a strawberry lemon blueberry sauce. You can also add vanilla extract to this keto strawberry sauce to add extra flavor and depth. This recipe is supers easy to customize to your favorite fruits.
What sweetener is used in keto strawberry cheesecake topping?
Lakanto Munkfruit Classic, Monkfruit has zero net carbs and zero calories. This sweetener is easy to measure out because it’s a 1:1 substitution. Monkfruit is also Non-GMO, contains no maltodextrin, and in my opinion has the least amount of aftertaste out of all sugar-free sweeteners.
Why add lemon juice?
Lemon juice adds extra flavor and cuts through the sweetness of the strawberries and monkfruit. Freshly squeezed lemon adds an extra freshness to the flavor; however, if you do not have fresh lemons on hand feel free to use bottled lemon juice.
How do I store this sauce?
This sugar-free strawberry sauce can be stored in an airtight container for 7 days, or you can freeze it up to six months. If you’d prefer your sauce warm, put it in the microwave for a couple of seconds before pouring over your keto dessert.
How can you make this keto strawberry topping smooth?
If you prefer a smooth sauce to one with strawberry chunks in it, there are a couple of methods to smooth out your topping.
- Use an immersion blender once low carb strawberry cheesecake topping is finished and blend until smooth or desired consistency.
- Strain your sauce once it is finished. By straining your low carb strawberry cheesecake topping, there will not be any strawberry bits in the sugar-free syrup.

Ingredients
- 1 cup Strawberries chopped
- 2/3 cups Water
- 1½ tsp Lakanto Monkfruit Classic
- 1½ tsp Lemon juice
Instructions
- Chop 5 large strawberries.
- Add strawberries, water, Lakanto Munkfruit Classic, and lemon juice to a pot.
- Bring sauce to boil and boil on medium heat.
- Reduce to simmer on low heat, and cook for 20 minutes or until sauce thickens and reaches desired consistency.
