- 2 Tablespoons of olive oil or bacon grease whatever you have handy
- 1 Tablespoon Butter
- 1 Tablespoon Italian Dressing doesn't matter what kind
- 1/2 tsp garlic salt
- 1/2 tsp pepper
- 1/4 tsp dried minced onion
- salt to taste
- 8 oz bacon, chopped optional
Instructions
- Dump all of the ingredients in a pan and bring to a boil.
- Boil uncovered until almost all of the juice has evaporated.
- You can boil on medium/high so that they will be ready faster (approx 35 - 45 minutes) or boil on medium to low for an hour or longer depending on how much time you have available.
- Stir occasionally. The beans will begin to fall apart as the juice cooks out. It is normal.
- Salt to taste.
- Enjoy!

I use Italian dressing in a bottle. You do not drain the green beans as you want to cook them until the liquid evaporates.

I made theses a few weeks ago and they were fantastic! I just put another pot on in my cast iron Dutch oven. I did use a large bag of frozen green beans and some water but I don’t consider that as changing your recipe. I wasn’t too sure about the Italian dressing the first time but I used it and loved them. I really think this is a great recipe, loved the resulting flavor and texture! Sadly, my green bean dish turned out so salty, that we could not eat it as is.
I suppose different brands of green beans have different quantities of salt?
I’d love to know which canned brands you are using…and are you using unsalted butter by chance.
I suppose I could replace the the liquid in my cans with water, if need be. But I’d be glad to buy a different brand, as clearly you have one that works well!
I did a save by adding a lot of heavy cream along with some glucommanan powder to thicken and that turned it into a creamed green bean dish that was still on the verge of being too salty, but I got away with it and frankly, that was delicious too. Maybe a way for others to change this great recipe up now and then, especially if you need more keto fat in a dinner.

The brand I used was called Harvest Valley (packed in WI). It had 380 gr of sodium per serving with 3.5 servings per 15oz can. So with all those cans, I had 5320 gr of sodium BEFORE the butter, Italian dressing, garlic salt and any salt that might have been in my bacon grease.
I think everyone has different tastes when it comes to salt. This recipe isn’t salty to me at all, but if it is for you I would suggest using unsalted butter and replacing the liquid with water. I use different brands depending on where I shop and what is on sale.

I’ve made this a couple of times in the pot on the stove and love it soooo much. Hey Ruth, I think you could use a slow cooker with fresh green beans. Canned beans would be a challenge because they are already so soft.
Italian Dressing has sugar which is not Keto. This is not Keto
Bill, this recipe calls for 1 tablespoon of Italian dressing for the entire recipe. A serving size of Italian dressing on average has about 2 carbs in 2 tablespoons. So this recipe has 1 carb from dressing divided into 14 servings. That is 1/14th of a carb from the dressing per serving. I’m pretty sure this would fit into your macros. This recipe is indeed keto friendly.
