A hamburger bun or slice of bread might be what many of us dream about those first few weeks of eating a keto diet. I think we all start looking for some kind of substitute to satisfy our bread cravings. I know I tried a host of different recipes, which left me feeling disappointed mostly.

Then, I started hearing about 90-Second Keto Bread. If you’ve ever tasted it straight out of the microwave, you may understand why I think it is a lifeless, dull, flimsy eggy bread. I am just not that desperate for bread if I have to eat it like that.

I love tweaking recipes and thought there has to be a solution that would bring this keto bread to life. The key to a delicious 90-second keto bread recipe is browning it in a skillet before serving with a little butter to make it crisp.

WHAT IS 90-SECOND KETO BREAD?

It is simply a single portion of a keto-friendly bread cooked in the microwave for 90 seconds.

HOW MANY CARBS IN 90-SECOND BREAD?

This particular recipe has 1g net carbs per serving. This will vary depending on the serving size.

INGREDIENTS FOR 90-SECOND KETO BREAD:

  • Egg (you can also use an egg white if you are particularly sensitive to foods tasting eggy)
  • coconut flour
  • butter
  • sour cream
  • baking powder
  • cheese
  • pinch of salt

After you mix up all the ingredients, it will look a little lumpy like this in the picture above. Now, you simply microwave for 90 seconds.

This is sad, lifeless 90-Second Keto Bread straight out of the microwave. You don’t want to eat it like this as it will taste spongey and eggy. The next steps are the most important in the process of making the best keto bread recipe.

How to reheat and cut your low carb bread

I tend to make my 90-Second Keto bread rather thin in a ramekin instead of a mug. Otherwise, it is just too thick for me. You’ll need a serrated bread knife to cut the bread in half horizontally.

Melt butter in a skillet and sear bread on both sides until it’s crispy. I use an 8″ skillet.

Last night I made Keto Pot Roast and remembered a recipe at lunch today where you serve pot roast on bread with melted cheese. As I was making the bread, I decided to change up some of the ingredients in hopes of making it even better. I can say that it was a total success. You do still need to crisp it up in a skillet or toaster oven for sure, but the flavor is so much better with the changes I made.

Step 1: Melt butter in a ceramic or glass bowl. (mine was about 6 inches)

  1. I don’t always have sour cream around. It is one of those items that I use here and there. Often I have to throw it out before I use it all. Any chance Greek yogurt would work in its place?

    1. I’m not sure. I’ve never tested it with greek yogurt. I have subbed cream cheese and it worked just fine.

    1. I haven’t tried this exact recipe as a chaffle. I’m not sure if it would work out, but it might. If you give it a try let me know if it works.

  2. Kasey, Anyway I can make this without the cheese? My husband won’t touch anything with cheese in it unless I can sneak cream cheese in if there’s enough other flavors so he doesn’t taste it. A lot of times I just leave the cheese out, but this looks like one of the main ingredients. Thanks

  3. I made a quadruple batch of this and instead of cooking then splitting it, I split it in half in the Tupperware type burger shaper. Microwave about 50-60 seconds and Perfect burger size!! I froze mine and pop them in the toaster for use.

I substituted cheddar cheese with mozzarella cheese and added 1/4 teaspoon phyillum husk powder!!! So good!! Just wanted to share!! Thanks for sharing all your fabulous recipes!!     I am so pleasantly surprised! I have tried keto breads in the past so I quite frankly didn’t have high hopes, but this was actually GOOD. I substituted coconut flour for almond flour, and while I haven’t found the right amount for the best taste/consistency, this was an awesome foundation to work off of.

    Such a great idea to fry this in a pan! I mean soo much better than all the egg in a mug recipes that don’t add this great piece of information!! Then I put our bacon in the pan. Then 2 silicone rings which held an egg each. Then my husband slapped on a piece of cheese before I could think about how many calories this all was going to be! And it was Super Delicious!!! Thank you soo much!!! I printed off more to try too!!! They all look great! And we use a lot of almond flour & coconut flour has more fiber so I’m glad to be using that for a change cause I have a huge bag of it in the fridge! AND I’m reading Coconut Cures by Bruce Fife so I’m extremely happy to be using coconut flour. I put the oil straight in my coffee every morning now too. If anyone wonders why, read this book and read the book Alzheimers Disease What If There Was a cure by Mary Newport MD. Thank you Kasey, you are another Godsend!!!

    1. I’d stick it in the oven at 350 degrees until it’s done. Not sure how long it would take to bake you’d just have to watch it.
