This is probably one of my favorite keto ground beef recipes. Not only is it packed full of cheesy goodness, but it’s loaded with veggies as well. I’m a huge fan of adding in nutrients and healthy options whenever I can! Plus, with all the other flavors added in, it’s a super simple way to get your little ones (or stubborn adults!) to eat their vegetables as well. I’ve made this more than a few times, and every single time it’s a win in our house. Not only is it a win, but there are usually requests for “seconds” as well! This keto ground beef recipe is a slam dunk!

Can you eat ground beef on a Keto diet?

Absolutely! It perfectly fits the bill. Living a keto-lifestyle doesn’t mean that you have to feel as if you’re missing out. You can enjoy many of the same comfort foods and tastes that you’ve always eaten. There are many delicious keto ground beef recipes that provide lots of variety in tastes and flavors.

Cream cheese and heavy cream are used in many keto ground beef recipes and this one is no exception. Together, with the ground beef they create the perfect most flavorful sauce that is reminiscent of Beef Stroganoff, at least that is what I’ve read in the hundreds of comments on Facebook.

What is the Best Cast-Iron Skillet?

I prefer to use a cast-iron skillet when I make this keto recipe with ground beef as it goes from stove to oven with only one dish. If you don’t have a cast-iron skillet, they are very affordable and last forever. This 10.25 Cast Iron Skillet works perfectly with this recipe.

Do I have to have a Cast Iron Skillet to Make this Keto Ground Beef Casserole?

No, it is not necessary. Any skillet will do. If your skillet isn’t oven-safe, simply transfer the keto ground beef mixture to a baking dish before adding the green beans and cheese. Most everyone has casserole dishes that can be used for any type of skillet meal if a cast-iron skillet isn’t available.

This recipe is simple because there’s hardly any prep work required. Plus, if you keep browned ground beef in the freezer, it’s even easier to make. In under 30 minutes, you will have a delicious meal that you and your family will love, bite after bite. Plus, if you use an oven-safe skillet, you’ll only have one pan to wash.

I like to mix up the cheeses for added flavor. You can change it up and use your favorite variety. Feel free to add more spices and salt and pepper to taste. I try to keep the carb count for my recipes as low as possible so that if someone wants to add onions, spices, or more veggies there is always room without blowing macros for the day. This recipe is low carb and keto-friendly and can be easily modified in many different ways.

Variations to this recipe:

I’ve had many comments from those who are adamant that they don’t like canned green beans. I created this low carb ground beef casserole recipe with canned green beans since most have a can or frozen green beans in their pantry. Fresh green beans go bad quickly so they may not be an option for everyone. However, feel free to swap out the canned green beans for frozen or fresh. Depending on how you prefer your green beans you may want to steam fresh green beans first. Here are a few other ideas:

  • Use Fresh Bean Greens
  • Use riced cauliflower, broccoli, or another favorite low carb veggie in place of the green beans
  • Replace ground beef with ground turkey, ground venison, or shaved skirt steak
  • Change up the cheeses! Try adding Pepper Jack, Colby Jack, or another favorite cheese.
  • Add additional spices such as more garlic, paprika,

How to store Low Carb Ground Beef Casserole

Keto and low carb casserole are typically great for meal plans as they keep well for several days. Store this low carb Ground Beef Casserole in the fridge for about three to five days. If you can’t eat it all during that time, store in the freezer for six months in airtight containers. It does contain dairy products, which sometimes break down when frozen. It shouldn’t change the taste, but the texture of the sauce might change.

Ingredients

  • 1 pound ground beef
  • 3 ounces cream cheese
  • 1/2 cup beef broth
  • 1/2 cup heavy whipping cream
  • 2 tsp Bragg's Aminos
  • 1 teaspoon garlic powder
  • 2 cans green beans, drained
  • 3/4 cup cheddar cheese
  • 3/4 cup mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Preheat oven to 350 degrees.
  • Brown ground beef in a cast-iron skillet then drain the excess grease.
  • Add cream cheese and stir until melted then add beef broth, heavy whipping cream, Bragg's Aminos, garlic powder, and salt/pepper. 
  • Bring to a boil and cook on medium heat until mixture begins to thicken then reduce heat and simmer.
  • Once the ground beef mixture thickens add the two cans of green beans that have been drained on top then sprinkle cheese on top of green beans.
  • Bake for 25 minutes.

    I absolutely love this recipe! My husband loves it too, but he wants to double the beef. If I do that, will I need to double the cream cheese, etc?

    Amazing, I added In half an onion and green bell pepper. I didn’t have the Braggs seasoning so I just did a garlic herb, salt and pepper. Also 6oz of cream cheese instead of 3oz. Came out amazing, super good.

    Loved it! I am always pushing more veggies in my family! I added an extra can of green beans, a large container of sliced fresh mushrooms and a small diced onion. To change the sauce for extras I added a little extra broth. So yummy! Thank you for sharing!

    With no plan in mind for dinner last night, I did a quick Google search and this recipe came up. To my surprise, I actually had ALL of the ingredients. Major score!! An even bigger score was the finished product – this will have to be on a weekly rotation, especially now that we’re heading into the cooler months. I used ground venison and about 1 1/2 (12 oz.) bags of frozen green beans, steamed. All I can say is WOW – delicious!!!

    My family enjoys this recipe. I use fresh green beans, or sometimes fresh French cut green beans and mushrooms that I saute until cooked. Then, I follow the recipe as written and it’s become a family favorite.

    One of my go to quick weekday meals now. Up to 3xs a month so definitely a new family favorite. And nobody is doing keto anymore so it is good regardless. You don’t taste the cream cheese and I’ve used a few different variations but the original is hard to beat

    Our family loves this recipe. I generally follow recipe but I also add French’s Crispy Fried Onions for a different texture. Tonight I am doubling recipe and adding ground sausage and mushrooms cause why not? This is a family favorite now and I love it since easy to make.
