Keto Breakfast Casserole with Sausage

My family loves my Keto/Low Carb Sausage Ball Puffs, but sometimes I don’t want to take the time to scoop out every single one and bake them in batches. When my time is short, I can make this Keto/Low Carb Sausage Breakfast Casserole instead. It is basically the same recipe except I subbed out the cheddar cheese for Monterrey Jack cheese since that is what I had on hand today.

My hubby and big kids love spicy foods, so I made it with hot sausage. I’m pretty much a wimp when it comes to hot stuff, but the hot sausage was pretty mild. This Keto breakfast casserole warms up nicely in an air fryer or wrapped in aluminum foil in the oven.

I’m a little bit of a leftover snob as I want my food to taste as close as possible to fresh out of the oven so I rarely warm up foods like this in the microwave. However, my family enjoys this recipe so much; I’ll probably have to make two casseroles to have enough to last for a couple of days.

Serving Keto Breakfast Casserole

Instructions

  • Preheat oven to 375 and grease a 9 X 13 casserole dish.
  • Combine melted butter (I cool mine by popping the bowl in the fridge for 5 min), eggs, salt, and sour cream then whisk together.
  • Add coconut flour and baking powder to the mixture and stir until combined.
  • Add drained browned sausage and shredded cheese.
  • Stir until combined then pour batter in the casserole dish.
  • Bake for 20-25 minutes until it starts to brown a little around the edges.
  • Enjoy!

  1. I have never cooked or eaten much sausage in my life, so sorry for the newby question, but how/where do you buy the sausage? Do you buy it in links and break them up, or do you buy it raw/ground somewhere?

    1. In the meat section of your grocery. It will be in the same section with hot dogs, sausage, bacon, etc. Use the breakfast sausage logs for this recipe.

  2. Thanks for sharing this recipe! The macros listed on the bottom of the recipe seem super low for the entire recipe! As you mentioned, you cut the casserole into 12 pieces. So for each price, is it a 12th of the macros listed?

  3. My husband won’t eat egg yolks. Would this be okay with just egg whites? Did I need to use 8 egg whites in place of the 4 whole eggs?

    1. The eggs help make the bread in the casserole so I’m not sure it would work without the egg yolks. You need those for moisture. This is not an egg casserole. It is my sausage ball puffs in a casserole.

  4. As I started assembling this, I realized I didn’t have any sour cream so I substituted 2 tbsp of cream cheese instead and added some heavy cream. It was delish!!!! The whole fam enjoyed this!

    New to all of this but this is a great breakfast; 12 pieces will last us 3 days at least. I would imagine that baking and freezing half will not ruin anything about it. Going to try that next time.
    But I do have a question? What is the perfect Keto coffee? Why is it called that? Does it give more energy? I am a coffee nut so this is a need to know.

    1. I assume you are talking about bulletproof coffee. It is a way to get additional fats into your diet as well as keeps me filling full without having to eat a lot of carbs, calories, or proteins.

    I love this recipe! I have tried it both with breakfast sausage and bacon. As well, I have used both coconut flour and a blend of almond/coconut flour; both options are very good. Thank you for sharing!

  9. 0 MY! I am eating this right now and it is scrumptious! The only changes I made is that I had taken browned sausage and diced ham out of the freezer so I used a combination. This will be on my table often! Thank you, thank you, thank you!

    1. Yes, you can but it is not a 1:1 conversion. You need 4x as much as the coconut flour measurement.

  11. I was going to mention that I was going to try them in a muffin pan. I might even try a couple in my air fryer, I just got my silicone liners, both regular and mini.
