Keto Breakfast Casserole with Sausage
My family loves my Keto/Low Carb Sausage Ball Puffs, but sometimes I don’t want to take the time to scoop out every single one and bake them in batches. When my time is short, I can make this Keto/Low Carb Sausage Breakfast Casserole instead. It is basically the same recipe except I subbed out the cheddar cheese for Monterrey Jack cheese since that is what I had on hand today.
Another great recipe when time is short is my sausage patties in the oven.
My hubby and big kids love spicy foods, so I made it with hot sausage. I’m pretty much a wimp when it comes to hot stuff, but the hot sausage was pretty mild. This Keto breakfast casserole warms up nicely in an air fryer or wrapped in aluminum foil in the oven.
I’m a little bit of a leftover snob as I want my food to taste as close as possible to fresh out of the oven so I rarely warm up foods like this in the microwave. However, my family enjoys this recipe so much; I’ll probably have to make two casseroles to have enough to last for a couple of days.
Ingredients:
- Breakfast Sausage– Pork sausage is commonly eaten for breakfast in the United States. This sausage is usually seasoned with black pepper or sage. You can use mild or hot sausage in this recipe.
- Butter– Compliments and enhances the flavor of the keto breakfast casserole.
- Coconut flour– Low in carbs and high in fiber, this flour works great as a keto-friendly ingredient.
- Full fat sour cream– Keto-friendly, full-fat sour cream helps make this keto breakfast casserole extra creamy.
- Eggs– Low carb and high protein, eggs make the perfect base of this keto breakfast casserole.
- Salt– Use as directed, a little goes a long way.
- Baking powder– Helps create a light and fluffy breakfast casserole.
- Shredded Monterey Jack Cheese– I like to use Monterey jack as it is mild in flavor and melts well, but you can try other types of cheese as well.
STEPS:

Step 1: Preheat the oven to 375 and grease a 9 X 13 casserole dish.
Step 2: Combine melted butter (I cool mine by popping the bowl in the fridge for 5 min), eggs, salt, and sour cream then whisk together.

Step 3: Add coconut flour and baking powder to the mixture and stir until combined.
Step 4: Incorporate drained browned sausage and shredded cheese.
TIP: Cheese is a great keto-friendly food, containing high amounts of fat, moderate protein, and low amounts of carbs. For keto recipes, I suggest that instead of buying pre-shredded cheese from the store, buy a block of cheese and grate it yourself. Pre-shredded cheese often contains additives that increase its total carb amount. By doing it yourself you can avoid those extra carbohydrates.
Step 5: Stir until combined then pour the batter into the casserole dish.
Step 6: Bake for 20-25 minutes until it starts to brown a little around the edges.

HOW TO SERVE KETO BREAKFAST CASSEROLE
While I love to use this keto breakfast casserole as a stand-alone meal, some prefer a little something extra to go alongside this for breakfast. In that case, you can easily whip up a batch of our keto biscuits. Just slice them in half, toast, and add a portion of this keto breakfast casserole to create a delicious and easy breakfast sandwich!

WHAT KETO SAUSAGE CAN I USE?
When making this keto breakfast casserole, you can add whatever meat you want, but I like to add sausage to mine. When choosing a sausage brand make sure it is keto-friendly and contains zero sugar. If you want to mix it up, you can also add bacon or ham to the keto breakfast casserole instead.
CAN I ADD VEGETABLES TO MY KETO BREAKFAST CASSEROLE?
Following a keto diet can make you feel limited when it comes to the vegetables you can eat. Adding vegetables in the keto breakfast casserole is 100% optional, but adding them can add additional flavor and make this already healthy dish healthier. The original recipe does not call for veggies, but now I like to make it both ways. If you do decide to add some of my low-carb favorites.
Vegetable Options:
Option 1: Spinach is a green leafy vegetable that is packed with health benefits. One cup of cooked spinach contains more than 10x the recommended daily intake of vitamin k!
Option 2: Mushrooms are extremely low in carbohydrates and also have been shown to contain anti-inflammatory properties.
Option 3: Avocado, is a high-fat fruit that will pair well with this mildly spicy keto breakfast casserole.
Sausage Breakfast Casserole
Ingredients
- 1 lb breakfast sausage browned and drained (can use mild or hot)
- 4 1/2 tbsp melted butter
- 1/3 cup coconut flour
- 2 tbsp full fat sour cream
- 4 eggs
- 1/4 tsp salt
- 1/4 tsp baking powder
- 2 cups shredded monterrey jack cheese
Instructions
- Preheat oven to 375 and grease a 9 X 13 casserole dish.

I use block cheese and hand shred because shredded cheese in a bag contains potatoe starch which is not keto friendly. Interested fact I found out. Will definitely make this
Yes, I usually do as well. However, when I am in a rush I will use shredded and haven’t had any problem with it stalling me.

Yes, but you will need 4x as much.
How big is a serving?
I just cut the pan into 12 equal sized servings.
I cut it into 6 pieces and it still was only 3 carbs, I used maple breakfast sausage, it has less carbs than the regular one. This is absolutely delicious

Could almond flour be subbed?
Yes, but it is not a 1:1 substitution. It is more like 1/4 cup coconut flour to 1 cup almond flour.
Do you think the eggs could be doubled to make this a little fluffier? Also, can it be put together the night before and then thrown in the oven in the AM? Thanks!
I have no idea I have never tried it that way. I would think it would taste pretty eggy. Yes, you can put it together the night before and bake the next day. The cook time will be a little longer.
How long after being cooked will it be ok in the refrig for reheating?

Is 4 eggs correct? I made it with 12, not realizing the error. It was good. Definitely tasted the coconut flour. Baked it about 5 mins longer
Yes, 4 eggs are correct. If you are particularly sensitive to the taste of coconut you can sub almond flour but you’ll need 4x as much.

Hi, I’m new to keto starting next week. This is my breakfast dish for the week. I’m preparing this for 3 people so it says it makes 12 servings so u only eat 1 square for breakfast right? Are you still hungry after? Can I add avocado and lettuce to make it more filling?
It is up to you how much you eat. I just provide the nutritional info per square so each person can determine their own serving size. I only eat breakfast one day a week on Saturday mornings personally. I would just eat one square with a slice or two of bacon.
Made this with almond flour and added onions and bacon (personal preference) super yummy.

Hi! I have made this several times and love it! I was wondering what you thought of substituting the shredded cheese for cream cheese instead. Do you think that would turn out well or would it not cool right and ruin the casserole?
