Keto Diet Recipes: Meal Plan Week 45 

We are home from our spring break getaway, and I am excited to get back into the kitchen and cook for my family. After a week of mostly eating out, a yucky virus that spread to 3/4 kids, and eating off plan having the predictably of a meal plan is what I need to get back on track. Recently, I slimmed down the weekly keto meal plans to dinner only, to be more intentional with my time. I have a considerable keto/low carb recipe index with tons of ideas for easy meals if you need further inspiration for low carb breakfast, lunch, or dinner recipes.

This Week’s Keto Diet Recipes with Meal Plan

Low Carb Breakfast Ideas: You can find lots of keto breakfast ideas here. I typically only drink bulletproof coffee for breakfast as it keeps me full for hours. I recently posted how I make my bulletproof coffee since I had so many of you ask. To keep it simple at lunch, I prefer to eat leftovers, so I am not spending a ton of time in the kitchen during our homeschool day. I have a big family so to make this happen I often double or triple recipes when I prepare dinner.

 

Sunday: Keto Zucchini Lasagna and a Garden Salad

*Time-saving tip: When you brown the ground beef for this recipe grab a few extra pounds and follow the instructions here to brown it all at once and freeze the extra for later. Then, on Friday when you need browned ground beef for the Pizza Casserole, you can grab it out of the freezer and save a ton of time.

 

Monday: Monterey Chicken and roasted brussels sprouts

 

Tuesday: Keto Pot Roast in the Slow Cooker (IP Version), Southern Green Beans, & Cauliflower Mac N Cheese

 

Wednesday: We eat out on Wednesday nights.


Thursday: 
Jalapeno Popper Chicken Soup with a garden salad

 

Friday: Pizza Casserole and roasted asparagus

 

Saturday: Ribeye Steak with Grilled Zucchini & Squash

 

Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds

Sweet Treat – Keto Chocolate Chip Cheesecake Muffins
