Keto Stuffed Peppers (Mexican Style)
This Keto Stuffed Peppers Recipe is simple, delicious, and keto-friendly. Mexican seasoning gives this dish incredible flavor! With only 0.4g of net carbs per serving, it fits perfectly into a low-carb lifestyle.
Keto Stuffed Peppers Recipe
One of the biggest reasons I love these stuffed peppers without rice is its simple keto-friendly recipe but still insanely delicious. No matter how healthy a recipe is, I’m a firm believer that it should also have a ton of flavor and texture. Living the keto lifestyle doesn’t mean that food should be tasteless or boring.
Honestly, this is probably one of the most straightforward Keto recipes you’ll ever make. My son, my biggest keto food critic, said, “Mom, I think this is your best keto recipe yet.” I waited until after he finished his second helping before spilling the beans about his least favorite ingredient…..cauliflower. He hates cauliflower and can usually detect the smallest amount, but not in this recipe.
Are Bell Peppers Keto Approved??
While you have to be mindful of the serving size, a green medium bell pepper contains only four net carbs, which makes it a healthy vegetable in moderation. All bell pepper colors have similar nutritional information.
Is Cauliflower a good vegetable to eat while on keto?
Yes, cauliflower is an excellent vegetable on the keto/low carb diet because it is versatile and low in carbs. It has tons of vitamins, minerals, and fiber. Besides the nutritional value, one cup of raw cauliflower only has three net carbs, making it the perfect keto vegetable.
Store-bought taco seasoning may not be the best choice due to some of the ingredients and the carb count. However, many feel that store-bought taco seasoning is okay. Check out my recipe for homemade keto taco seasoning to add to the ground beef mixture if you watch the ingredients.
Pro Tip:
In a baking dish, pop the bell peppers in the microwave for 5 minutes before adding the ground beef mixture to soften the peppers. By doing so, you heat it just enough to avoid a crispy texture when the keto-stuffed peppers are done. While these are in the microwave, it’s a good time to preheat the oven, so it will be ready when needed.
Adding salt, pepper, onions, and garlic to the riced cauliflower helps it to taste much better (just being honest here). The cauliflower rice gives the keto-stuffed peppers the texture and flavor of Mexican rice without all the carbs. My children are not huge fans of cauliflower, but they weren’t even aware it was an ingredient in this Mexican-style low-carb stuffed pepper recipe.
Cheese makes everything better, right? Adding cheese to Keto stuffed peppers adds fat and protein to your keto/low carb diet. You can use any cheese that you prefer. Besides white cheddar, I have also tested this recipe with Colby Jack and Monterey Jack cheese, and the dish has always turned out fantastic.
Extra Veggies in this Mexican Stuffed Peppers Recipe
Anytime I can add more veggies to a low-carb recipe and make it more healthy, I’m 100% game. I love how this low-carb stuffed peppers recipe has cauliflower as an added veggie. Feel free to play around with the amount you use, as you may enjoy more riced cauliflower. I had to play my cards carefully with this recipe as too much riced cauliflower would out my secret.
I created these Keto Stuffed Bell Peppers recipe because my family loves any Tex-Mex or Mexican food. The bell peppers, beef/riced cauliflower mixture, and taco seasoning have a rich, savory flavor. Recipes like this help us to stay on track and not get bored with our keto food choices.
What is a great filling for bell peppers?
This recipe’s Mexican ground beef mixture is a twist on traditional stuffed peppers. We loved the bold, hearty flavor the keto taco seasoning added. Although this is a Tex-Mex recipe, you could change it up and add a low-carb marinara tomato sauce such as Rao’s for more of an Italian flare.
What is good with low-carb stuffed peppers?
Adding a garden salad with an olive oil-based dressing (or your favorite alternative) to the already hearty meal will give you an easy, delicious, well-rounded keto dinner. If you want to pack an extra punch of flavor with these pepper, you can also top them in homemade keto enchilada sauce!

How to Make Keto Stuffed Bell Peppers Recipe:
Keto Stuffed Peppers
Ingredients
- 1 red bell peppers
- 1 yellow bell peppers
- 2 green bell peppers
- 1.25 lbs ground beef, browned
- 1/4 onion, chopped
- 2 garlic cloves
- 1 10 ounce can Rotel
- 2 tbsp homemade taco seasoning
- 2/3 cup beef broth
- 1/2 cup steamed riced cauliflower (I steam a 10 oz bag and use part of it)
- 1 1/2 cup Monterey Jack Cheese or Colby Monterey Jack
Instructions
- Cut bell peppers in half horizontally and clean out the inside. Place face up on a greased 9x13 casserole dish and microwave for 5 minutes.
- Add ground beef, chopped onion, and minced garlic to a skillet and cook until ground beef is browned. Drain.
- Pop the steam bag of riced cauliflower in the microwave.
- Add the Rotel, homemade taco seasoning, beef broth, and 1/2 cup of riced cauliflower (save the rest for a different meal. You could add more, but my kids didn’t notice it was in the ground beef with this amount)
- Bring taco mixture to a boil and simmer for 10 minutes uncovered on medium allowing the liquids to reduce and the sauce thickens. If the sauce hasn’t reduced after 10 minutes continue to simmer until it does.
- Scoop the ground beef mixture into the bell peppers.
- Sprinkle grated cheese on top.
- Bake for 20 min in a 350-degree oven.
- Enjoy!

I think this would ne good.gone try it
Hi I have a question. With six Bell peppers cut in half that’s a total of 12 and yet you say this makes eight servings. I’m confused? if you had to each that would be six servings, so I’m just curious about the nutrition count thank you!

Ahhhh…I see what you are saying. There was a typo in the number of peppers. That has been corrected. It should have been 4 peppers cut in half, which makes 8 servings. It did lower the carb count as well.
1 Red, 1 Yellow, 2 Green, 4 peppers 8 servings.
Thanks so much Kasey, my family loves this recipe. I use half ground beef and half ground Italian sausage. I also add chopped mushrooms and a 14oz bag of riced cauliflower. This basically doubles the recipe, so I freeze half of the meat mixture to put together quick midweek meal. It’s delicious and easy to prepare.
I do recommend anyone making this to use your taco seasoning recipe. It’s easy to put together and delicious.
Sure! Glad you all enjoyed it. That sounds like a fabulous twist on the recipe. 🙂
This is a great recipe, thank you. I used ground turkey instead of beef and a Mexican Blend cheese. Lots of flavor for few calories and carbs! Thanks again.

DELICIOUS! I’m a newly diagnosed Type 2 diabetic and this was awesome. I actually chopped the bell peppers and put it all in the crock pot on low for 4 hours. Added the riced cauliflower the last thirty minutes.
Awesome, Pam. Glad you enjoyed.
Sounds great.
This was delicious! Lots of flavor! I used a whole bag of frozen riced cauliflower and only 1.0lb ground beef. Used the homemade taco seasoning as well. Really good! Will definitely make this again.
Glad you enjoyed!
Was delish! I added cauliflower rice to mine and pureed the remaining rotel tomatoes and poured it over the tops of the bell peppers. Tasted like a taco in a bell pepper!
Glad you liked it!!
So do you use a 1/2 cup cauliflower rice as stated in the ingredients? Or 2/3 cup as stated in the instructions?
Either works, depending on how much someone loves cauliflower. The recipe started with 1/2 cup and increased to 2/3 cup. Thanks for catching this for me. I will make the change.
Thank you!! I made them the other night and they were a hit, even the leftovers were yummy 🙂
This is recipe #2 from your line up that I have made to the letter. It was so yummy and easy. I must say, I just love this site. Your recipes and articles are delicious and common sense. Do you have a recipe book in the works? I would most certainly want one in my kitchen.
Thank you for your support. Not yet. It takes so much work and with four kids at home, it would have to be a really incredible fit for me to be able to consider.
Best stuffed peppers!
Awesome!!!!!
Can you freeze these????
I really don’t think they would hold up once you freeze them.
Love this recipe. Kasey hit another homerun
