Keto Stuffed Peppers Recipe

One of the biggest reasons I love these stuffed peppers without rice is its simple keto-friendly recipe but still insanely delicious. No matter how healthy a recipe is, I’m a firm believer that it should also have a ton of flavor and texture. Living the keto lifestyle doesn’t mean that food should be tasteless or boring.

Honestly, this is probably one of the most straightforward Keto recipes you’ll ever make. My son, my biggest keto food critic, said, “Mom, I think this is your best keto recipe yet.” I waited until after he finished his second helping before spilling the beans about his least favorite ingredient…..cauliflower. He hates cauliflower and can usually detect the smallest amount, but not in this recipe. 

Are Bell Peppers Keto Approved??

While you have to be mindful of the serving size, a green medium bell pepper contains only four net carbs, which makes it a healthy vegetable in moderation. All bell pepper colors have similar nutritional information.

Is Cauliflower a good vegetable to eat while on keto?

Yes, cauliflower is an excellent vegetable on the keto/low carb diet because it is versatile and low in carbs. It has tons of vitamins, minerals, and fiber. Besides the nutritional value, one cup of raw cauliflower only has three net carbs, making it the perfect keto vegetable.

Store-bought taco seasoning may not be the best choice due to some of the ingredients and the carb count. However, many feel that store-bought taco seasoning is okay. Check out my recipe for homemade keto taco seasoning to add to the ground beef mixture if you watch the ingredients.

Pro Tip:

In a baking dish, pop the bell peppers in the microwave for 5 minutes before adding the ground beef mixture to soften the peppers. By doing so, you heat it just enough to avoid a crispy texture when the keto-stuffed peppers are done. While these are in the microwave, it’s a good time to preheat the oven, so it will be ready when needed.

Adding salt, pepper, onions, and garlic to the riced cauliflower helps it to taste much better (just being honest here). The cauliflower rice gives the keto-stuffed peppers the texture and flavor of Mexican rice without all the carbs. My children are not huge fans of cauliflower, but they weren’t even aware it was an ingredient in this Mexican-style low-carb stuffed pepper recipe.

Cheese makes everything better, right? Adding cheese to Keto stuffed peppers adds fat and protein to your keto/low carb diet. You can use any cheese that you prefer. Besides white cheddar, I have also tested this recipe with Colby Jack and Monterey Jack cheese, and the dish has always turned out fantastic.

Extra Veggies in this Mexican Stuffed Peppers Recipe

Anytime I can add more veggies to a low-carb recipe and make it more healthy, I’m 100% game. I love how this low-carb stuffed peppers recipe has cauliflower as an added veggie. Feel free to play around with the amount you use, as you may enjoy more riced cauliflower. I had to play my cards carefully with this recipe as too much riced cauliflower would out my secret.

  • Cut bell peppers in half horizontally and clean out the inside. Place face up on a greased 9x13 casserole dish and microwave for 5 minutes.
  • Add ground beef, chopped onion, and minced garlic to a skillet and cook until ground beef is browned. Drain.
  • Pop the steam bag of riced cauliflower in the microwave.
  • Add the Rotel, homemade taco seasoning, beef broth, and 1/2 cup of riced cauliflower (save the rest for a different meal. You could add more, but my kids didn’t notice it was in the ground beef with this amount)
  • Bring taco mixture to a boil and simmer for 10 minutes uncovered on medium allowing the liquids to reduce and the sauce thickens. If the sauce hasn’t reduced after 10 minutes continue to simmer until it does. 
  • Scoop the ground beef mixture into the bell peppers.
  • Sprinkle grated cheese on top.
  • Bake for 20 min in a 350-degree oven. 
  • Enjoy!

  2. Make these very often! Instead of putting riced cauliflower in the ground beef mixture I make a Spanish “Rice” out of it with extra seasoning and some cheese melted right into the cauliflower. DELICIOUS!

    Very good and easy recipe. I made up your taco flavoring recipe and used two tbs of that to season the ground beef. Taste was very spicy but in a good way. This recipe is a keeper.
