I’m a soupie…like a foodie, but for soup. I love when those cold nights and evenings come around because that means that I can cuddle up with a bowl of keto-friendly soup. This keto stuffed pepper soup crockpot recipe is seriously delicious. It’s no secret that I make a ton of keto recipes every week, and this soup is one of my new favorites.
One of the biggest reasons that I love this Keto Stuffed Pepper Soup is because it’s not labor-intensive at all you throw the ingredients into the crop pot and leave it until the cooking time is up. This keto stuffed pepper crock-pot recipe delivers a powerful punch of flavor. On Sunday afternoon or Monday morning, I often make a big pot of soup to cover our lunches for several days.
I always view a recipe as a huge hit when my kids’ request “seconds”……..and this recipe delivered just that. I could hear the scraping of the spoons in the empty bowls searching for the last spoonfuls. We’d found a soup recipe hit!
Is Stuffed Pepper Soup Keto?
Yes, since we replaced brown rice with cauliflower, this is a hearty, delicious keto soup. Along with being keto/low carb friendly, this soup is also gluten-free. However, if you do have a gluten allergy check all the ingredients listed in the recipe card to make sure this soup is ok for you. One of my kids has a severe nut allergy, so I know you can’t leave anything up to chance.
My Favorite Slow Cooker for making Keto Stuffed Pepper Soup
The Ninja Slow Cooker is my favorite slow cooker. I can’t tell you how much I love the fact that I can brown the ground beef and then slow cook it all in one in the slow cooker. Plus, if I want to reduce the soup, I can turn it on the stovetop function and boil it or leave it on “stay warm” to serve later. I didn’t think there was that much of a difference between slow cookers, but the Ninja Multi Slow Cooker proved me wrong.
By chopping up the bell peppers and onions into larger chunks, it will give this low carb stuffed pepper soup a hearty flavor.
What else can I use instead of ground beef?
Ground turkey is another great option to replace ground beef. Its flavors will pair well with the tomatoes, bell peppers, and riced cauliflower.
If you don’t have the Ninja 4-in-1 crock-pot, this recipe is still simple to prepare. You start by browning the ground beef in a skillet with the onions and garlic first.
Pro Tip:
I brown ground beef in large batches then freeze for later. This is a massive time-saver for keto meal prep.
A few minutes before the ground beef is browned, add the green bell pepper and yellow pepper to the mixture and continue sauteeing.
Dump all the cooked riced cauliflower, diced tomatoes, seasoning, beef broth, and remaining ingredients into the slow cooker.

How to Make Keto Stuffed Pepper Soup in the Crock-Pot
Keto Stuffed Pepper Soup
Ingredients
- 1 pound ground beef
- 3 garlic cloves
- 1/2 onion
- 1 green pepper, chopped
- 1 yellow pepper, chopped
- 1 8 ounce can tomato sauce
- 1 10 ounce can Rotel (diced tomatoes and green chilis)
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 2 cups beef broth
- 2 tablespoons Braggs Aminos
- 1/4 teaspoon pepper
- 1/2 10 oz steam bag cauliflower rice (you can add more but my children will not eat if there is more cauliflower)
Instructions
- Brown ground beef with onion and garlic. The last 5 minutes of cooking, add the chopped green pepper. Drain.
- Microwave the 10 oz steam bag of riced cauliflower (I only use half of a steam bag of cauliflower because my children won’t eat it if I add any more, but feel free to add more if you would like)
- Add all ingredients including the riced cauliflower to the slow cooker and cook on low for 8 hours or high for 4.
I don’t have brags aminos. Is there something I can substitute for it?
It’s a healthier version of soy sauce.
We are supposed to watch the amount of protein that we eat a day your recips has a lot of protein
Ideas on how to convert this to instant pot?
Hey, Kerry, I just don’t have enough experience to answer this without testing it and seeing what happens.
I just made this today in the instant pot. I browned the beef with salt and pepper on the sautee setting with about a tbsp of oil. Then added the garlic, peppers, and onions to the pot. Cooked until the veggies were translucent. Then I added the basil and oregano, let it cook for a minute. Then I added the beef broth, a 28 oz can of diced tomatoes in juice and the riced cauliflower (still frozen). I didn’t have the rotel. But I did chop up a jalapeño–added to the pot at the same time as the other veggies–to get a similar flavor.
I set the instant pot to the soup setting and set it to cook for 15 minutes with no vent. I think it came out perfect! Thank you for a great recipe.

I live in the boondocks…not sure I can get liquid aminos. What would you use to substitute?
You can use soy sauce.
Do you have to pre-steam the riced cauliflower? I’m thinking it would cook well during the 4 or 8hrs in the crockpot. Sorry, you can tell I’m a lazy cook! Ha!
I’ve only fixed this recipe as is. If you buy the riced cauliflower frozen, all you have to do is pop it in the microwave. Easy peasy.
Do you use the coconut liquid aminos or soy sauce one?
I use the Bragg’s Aminos since I am not trying to avoid soy.

This is a serious delicious soup, Kasey! I feel a little guilty–I don’t want to share it with my husband (non-low carb). I made this on the stovetop using previously cooked ground beef, a bag of stir-fry peppers and onion, and frozen riced cauliflower (12-oz. bag). I typically use fresh peppers, onion, and cauliflower, but got them at a price I couldn’t pass. Also, I used Coconut Aminos, as that is what I had on hand. So, so good!!! Thanks, Kasey!
Made this soup using Italian turkey sausage for my non-keto friends and they loved it. Served with a side of keto cornbread and butter. Only told them it was all keto friendly after we ate it!! I make it at least twice a month and freeze it in serving size portions. Makes a quick and healthy meal in a hurry after work.

Your recipe calls for ½ onion. Is that to be diced or slices of onions?
Kasey, why do you only add the green peppers in the beginning when browning the meat and onions. Why not both green and yellow?
