Keto/Low Carb Meal Plan
As I have shared with you before, I am not a super organized or structured person. In fact, too much structure and lists make me feel like a caged bird longing to be free. So, when I say I meal plan, it is a very loose plan. First, I look at what we have going on the upcoming week and determine how many dinners we will eat at home. Then, I ask my family if they have any special requests. From there, I begin to look through recipes to decide what I am going to cook and create a Keto meal plan. Then, I check the pantry and fridge to create a grocery list. Generally, I buy just what we are going to eat that week to keep our grocery budget under control. This week is going to be busy. My in-laws are coming in town for a few days then my mom and aunt will be here this weekend from out of town. So, we will most likely eat out quite a bit. For now, I’m just planning to eat lunch at home most days and to cook dinner twice. When we go out to eat, it’s easy to choose foods that are low carb. I stick with steaks, bunless burgers, chicken, fajitas on a bed of lettuce, veggies, and salads. Eating Keto doesn’t have to be complicated, and you don’t have to cook constantly if you’d rather not. I’m sharing my Keto meal plan for the week below as you can see it is super simple.
Breakfast – I don’t always eat breakfast. Many days I fast until lunch. However, if I get hungry, I made Lemon Poppy Seed Muffins today that pair beautifully with bacon and a cup of coffee. My big kids have asked for Sausage Ball Puffs, so I’ll whip up a batch of those tomorrow to have on hand as well.
Lunch – As a homeschool mom, we eat lunch at home most days. Often I’ll make a big pot of soup at the beginning of the week for lunches. I also always make extra at dinner to give us a greater variety of choices at lunch. I’m going to make BBQ Smoked Sausage tomorrow for lunch, but I’m going to substitute ground beef for the sausage since I already have it browned in the freezer. This should cover my meals for several days, and leftovers from dinner should take care of the rest. If we end up needing more food for lunch, I’ll make a Hot Ham & Cheese Unwich because my kids love it so much.
Dinner – I usually cook dinner much more than this week. I’ll happily take a break.
Spaghetti Sauce (made with a low carb sauce) served over Roasted Spaghetti Squash and Garlic Cheddar Biscuits.
*Rao’s and Mezzetta Napa Valley Homemade Marinara lowest carb versions that I have found.
Hamburger patties cooked in a cast iron skillet with Loaded Broccoli.
Sweet Treats – Since we will have family in town, I will probably make two sweet treats this week to share.
Lemon Pie with a pecan crust and Coconut Haystacks.
