Keto Meal Plan Week 9
This is going to be a little bit of a different week for us. Our big kids are leaving for church camp in the morning for the first time. This is a big deal for us because our kids have never spent the night away from us except with family just a handful of times. My hubby and I are youth workers, so we will be going up to help with the evening service each night, which means we won’t go the entire week without seeing our babies (hallelujah!). Because our oldest daughter has type I diabetes and severe peanut and tree nut allergies, we have to be very diligent with her care. At the same time, I know we have to let go little by little as she is growing up. I know it is going to be such a great week for them, and I am so excited for them to experience all that God has for them. Needless to say, dinner will have to be quick and easy for the hubs and me. This week’s menu plan has lots of one pan meals so that I don’t have to spend a lot of time in the kitchen cooking and cleanup will be minimal. And, if our week gets too hectic, we can always stay on plan and eat out before going to camp each evening.
As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance simply because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk when I can and brown it in advance and freeze it in ziplock bags. It makes cooking dinner later so much faster. As always, this is a very loose plan. If I get a better offer for dinner out, I won’t hesitate to alter our meal plan for the week.
Monday:
Breakfast – Bulletproof coffee
Lunch – Smoked Deli Ham, Swiss Cheese, Pickles, Pecans
Dinner – Taco Salads with The Very Best Taco Meat
Tuesday
Breakfast – Bulletproof Coffee
Lunch – leftover Taco Salad
Dinner – Cheesy Ranch Chicken & Broccoli
Wednesday:
Breakfast – Bulletproof Coffee
Lunch – leftover Cheesy Ranch Chicken & Broccoli
Dinner – Queso Soup
Thursday
Breakfast – Bulletproof Coffee
Lunch – leftover Queso Soup
Dinner – One Skillet Chicken & Asparagus
Friday
Breakfast – Bulletproof Coffee
Lunch – Leftover One Skillet Chicken & Asparagus
Dinner – Our babies come home today from camp. We will take them out to dinner.
Saturday
Breakfast – Sausage Ball Puffs, Bacon, & Eggs
Lunch – Empty the fridge day of all the leftovers
Dinner – Bunless Burgers & Grilled Asparagus Wrapped in Bacon
Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds
Sweet Treat – Mini Cheesecakes
